Prepare the dough: in a large bowl, mix the flour with the fresh yeast. Cut the butter (try to use a butter with a high percentage of fat) the pieces and add it over the flour, mix it crumbling with your fingers. Add warm water, sugar, salt and egg. Knead until you get a fluffy dough, but good to spread.

Sprinkle the flour on the work table and spread the dough in a sheet suitable for thickness. Put the pieces of butter in place (with your fingers, to press them more easily). Refrigerate for an hour (don't forget to put the butter back in the fridge), then repeat the procedure (spread it on a sheet of the right thickness, put the pieces of butter again and fold the dough and let it cool) . Fold this way 3-4 times.

I start in the morning and end up baking them at noon. It's a lot of work, but you will be happy when you see what the dough has grown and how fluffy it has become. I think it's worth the result. You will get a dough with some beautiful and tender layers. If you also fill them with apricot jam and powder them at the end with sugar, they will be delicious.

After the last folding, spread the dough on the table sprinkled with flour, in a sheet of suitable thickness, cut into long triangular strips. When you cut the dough strips, you will see that they separate and shrink, unlike regular dough (due to the layers).

Add a little jam (try to use only jam, I filled some with the jam that flowed in the pan and burned a bit, so the jam is better). Roll from the base to the top, in the form of mini croissants (I hope my pictures help you) and place in a baking sheet (more spaced apart, because they increase the volume in the oven).

Grease with beaten egg and put in the oven, over medium heat, for 20-25 minutes or until golden. Turn the heat to medium for the first 5 minutes, then make it small.

2 trays are obtained.

They can be stored in metal cake boxes. They can also be taken as a package.
