- ¼ Cup sugar
- ¼ Cup water
- ½ Cup guava nectar
- ¼ Cup orange juice
- ¼ Cup passion fruit puree
- ¼ Cup pineapple juice
- 6 Tablespoons dark rum
- 4 Teaspoons grenadine
- 1 Tablespoon lime juice
In a large saucepan, make simple syrup by boiling the sugar and water together for 2 minutes. Take the syrup from the heat and stir in the guava nectar, orange juice, passion fruit purée, pineapple juice, rum, grenadine, and lime juice. Chill the mixture if it’s still slightly warm and then freeze in an ice-cream maker according to the manufacturer’s instructions.

Mai Tai Drink
When I think of sitting on the beach or by the pool on a tropical vacation there are a few drinks I think of. Frozen Strawberry Margaritas are one of them and a Mai Tai drink is another. There is just something about a fruity cocktail that screams vacation, warm weather, and the tropics.
Recently when I was on a Caribbean Cruise I actually had my first Mai Tai ever! We actually had a Mai Tai sorbet as a pallet cleanser during the chefs dinner one night. It was cool, fruity, and so tasty I new I had to try the real cocktail!
The Caribbean Princess ship that we were on is a Medallion Class ship. That means not only do you have the absolute best and fast internet at sea, you also have all sorts of great apps that you can use to play games, find your way around the ship, and even order food and drinks to be delivered to you! So I used the app to order Mai Tai drinks to our room while we were getting ready for dinner one night.

Served in a martini glass at a party. We used the tip to “spray” rum onto the sorbet for flavor and aroma. Worked great.
This was super good, but we have learned to add LESS of the boozy elements of recipes because you can always add more (which is true of lots of things, like sugar). Dark Rum has a lot of flavor, so, thanks anyway Miraval for the “heavy pour” but we just used 6 teaspoons, instead of 6 tablespoons, and that rum flavor all four servings. Plenty. Brought the calories way down! That’s 192 vs 64 calories for the rum, alone. So this then is what … like 30 calories or (give or take) less calories per serving. :)
Want us to give you even MORE savings? Don’t add the rum at all, and add a bit to a spray bottle, and SPRAY each serving. Believe it not, a heavy mist of Rum over the top of certain recipes (fruit salad, coffee, desserts) is enough to flavor the tip of the tongue and you’ve got alcohol calories in the single digits my friend.
MaiTai Tracy’s Kitchen: Our Favorite Recipes
Tom and I love to travel … and to eat! When Tom started Travels With Mai Tai Tom, MaiTai Tracy’s Kitchen was added as a way to help Tom build content. Somewhere along the way, I realized I enjoyed sharing recipes and really liked writing and taking pictures. I started by posting some of our favorites recipes from our years of entertaining. I have kept track of the menus for every single dinner and party we have had at our house since 1999. We like to host, what can I say?
Our very first party in 1991 was a Blazing Saddles costume party where we served Yankee Bean Soup and Tuna Surprise (food from the movie – not to worry, those recipes are not here). Our second effort was Thanksgiving, where the turkey erupted in flames. Apparently, it was a very juicy turkey and the drippings spilled out and caught fire in the oven. As I recall, everything turned out great despite our beagle snatching a loaf of cranberry bread from the table.
We are much improved since those two efforts. The recipes I share with you are our favorites ones that can’t go wrong and that we feel are worth the effort. Our motto: “Good Food, Great Friends and Fun.”
On the travel side of things, I am the “Scribe.” I take copious notes that Tom magically transforms into his trip reports and posts. I am also his back up photographer if it is a close up or a panorama, that is probably mine.

The 12 Best Rum Cocktails For When You Want to Get Away
A terrace overlooking a sunset. A white-sand beach. A bar in Havana. Pour up one of these, and you'll feel like you're there.
Rum runs the cocktail gamut. You can be meditative as you make a Mojito, treating each ingredient with the utmost care so that the mint is muddled just so, the lime squeezed just right, the rum-to-club soda ration is just perfect. You can also chuck a bunch of ingredients in a blender with some ice, dump it out in a cup, and garnish it with whatever's in your line of sight&mdasha pineapple frond, a dash of nutmeg, a bundle of dry twigs. Like a Painkiller. You can make a rum drink that lights a fire in your belly (Hot Buttered Rum, for example) or a rum drink that you quite literally light on fire (a Zombie, which is also what you will become after ingesting one).
As spring transitions to a hot-as-ever summer, rum takes its rightful place in the seasonal cocktail lineup, up there with tequila and bitter Italian aperitifs. These are 12 rum cocktails you can make for yourself at home&mdashwhich very well might be the only place you'll be drinking cocktails at all for the foreseeable future&mdashescalating from easier recipes to ones that'll demand most of your bar cart in pursuit of a spine-rattling ABV. You pick the poison.
There's no need to blend a Daiquiri with ice and sweetened strawberry pulp, à la Applebee's. This way&mdashthe classic way&mdashis much better.
&bull 2 oz. white rum
&bull 1/2 tsp. superfine sugar
&bull 1/2 oz. lime juice
Squeeze the lime into your shaker, stir in the sugar, and then add the rum. Shake well with cracked ice, then strain into a chilled cocktail glass.
Easy to make and delightfully spicy. Don't swap ginger ale for ginger beer.
&bull 2 oz. dark rum
&bull 3 oz. ginger beer
&bull 1/2 oz. lime juice (optional)
Fill a tall glass with ice cubes. Add rum. Pour in ginger beer and lime juice. Stir with a barspoon. Garnish with a lime wedge.
Keep the blender going all day. Relish the sugar buzz.

&bull 1 oz. coconut cream
Start with the rum. Then combine with unsweetened pineapple juice (you can sub in 3 ounces crushed or whole pineapple), and coconut cream in a blender. Blend on high with a cup or so of crushed ice, or 5 or 6 ice cubes. Pour into a tall glass. Garnish with whatever you've got.
It's like taking tea to quiet the stomach and soothe the soul. Only, of course, rum makes it better.

&bull 2 sugar cubes
&bull 1 pat unsalted butter
In a mug, dissolve the sugar cubes in a little hot water. Add rum and butter. Fill the mug with hot water. Sprinkle nutmeg on top.
This recipe is a good one to memorize if you can make a Mojito like it's second nature, you'll be able to impress anyone.
&bull 2 oz. white rum
&bull 1/2 oz. lime juice (squeezed fresh)
&bull 1 tsp. superfine sugar
&bull 3 mint leaves
&bull club soda or seltzer
In a smallish Collins glass, muddle lime juice with 1/2 to 1 tsp. superfine sugar. Add the mint leaves, mushing them against the side of the glass. Fill glass 2/3 with cracked ice and pour in the rum. Pitch in the squeezed-out lime shell and top off with club soda or seltzer.
Rum and champagne aren't obvious mates, but that makes a bright and honeyed Air Mail all the more interesting.

&bull 5 oz. Brut champagne
Stir rum, lime juice, and honey thoroughly with cracked ice in a chilled cocktail shaker. Pour unstrained into a Collins glass. Top with champagne.
&bull 3 oz. dark or gold rum
&bull 2 1/2 oz. pineapple juice
&bull 1 oz. orange juice
&bull 1 oz. coconut cream
Shake ingredients well with ice in cocktail shaker. Strain into a hurricane glass over fresh ice. Garnish with grated nutmeg.
This drink was meant to be downed while wandering the French Quarter. But your backyard will work in a pinch.

&bull 1 oz. passion fruit syrup
&bull 1 oz. fresh lemon juice
&bull orange slices
&bull maraschino cherries
Combine rum, passion fruit syrup, and lemon juice with ice in a shaker. Shake until frosty. Pour into a hurricane glass filled with more ice cubes. Garnish with orange slices and maraschino cherries.
There are many wrong ways to make a Mai Tai. This is the right way.

Shake ingredients with cracked ice in a chilled cocktail shaker. Pour unstrained into a large Collins glass (or tiki mug). Garnish with half a lime shell and a sprig of mint.
It's basically a milkshake. An alcoholic milkshake.

Shake all ingredients with ice. Strain into a glass over fresh ice. Garnish with fresh fruit.

Garnish with mint (either straight or dipped in lime juice and then superfine sugar) and/or fruit.

Let me start by saying the term “heat wave” is totally relative. Forget the fact that calling 80 degree weather a heat wave may be completely inaccurate to a meteorologist or it might be met with disbelieving sideways glances from the other adult occupant of my home.
Because you know what is not doable in a heat wave. . . .
House work. Cleaning a house in this type of weather might land one in the hospital from heat exhaustion.
Laundry. Who needs clothes in this weather? We were born naked.
Meal making. Firing up the stove in this heat? That’s crazy talk. Things have been known to spontaneously combust in extreme heat.
So you see, I may or may not have been using these excuses in response to the aforementioned house duties. And I may or may not be using the term “heat wave” as my season pass to laziness.
If you find yourself suffering from a heat wave, try to remind those in your life the dire consequences of being over worked by household non-essentials, then mix up some of these cocktail popsicles and get cool.
Mai Tais and Music in Waikiki, Oahu

I was born and raised on Oahu. But I just can’t help myself when I come home to Honolulu, I head straight for the ocean and dive in. Then I dry off, order up a Mai Tai and watch the orange sun slowly color the ocean to gold and wait for the green flash when it dips his head under the Pacific.
Purists tell me, “The Mai Tai isn’t even a Hawaiian drink.” To that I always answer that the only truly Hawaiian drink is awa, a ceremonial pounded or chewed root, and you aren’t going to stick an umbrella and orchid in it.
I have several favorite spots I want to share with you to enjoy a Mai Tai and music. I love each of them for a different reason. So grab your suit, a change of clothes and “holo holo” with me to chase the sunset and listen to some of the best music in Hawaii.
Chic Sip: Trump International Waikiki Hotel is a relative newcomer to the scene. From their elegant sixth-floor Wai’olu Ocean View Lounge you can try their Bacardi award-winning version of a Mai Tai (recipe is included here) Called Ilikea’s Mai Tai. Drinks are top-tier, pupu delicious and the sunset is spectacular looking Ewa direction over towards the Hilton Hawaiian Village Waikiki Beach Resort and Fort DeRussy beach to the ocean. They have served over thirty thousand of these so far. The hotel has just received the prestigious five star award for excellence by Forbes so they have the service covered, and the music and the international people there will be beautiful. Wear your high-heeled sandals and a pretty dress. Music varies from Hawaiian to contemporary each evening.
Perfect Beach Views: The Hilton Hawaiian Village Waikiki Beach Resort is a full-service resort with many facets. I like to plant myself in the lanai area of the Tropics Bar & Grill at the Ali’i Tower, a hotel within the hotel, well before the visitors have had time to shower and change. People watching is at its finest and soon the music sets the tone for the sunset. You might find Henry Kapono a popular Hawaiian signer accompanying your sunset, but certainly order the Village Mai Tai off the HHV Classic Hawaii menu. Layers of carmel colored rums and juices are topped off most appropriately with a premium rum float and the prerequisite orchid and pineapple garnish. Stick a straw in me, I am done.Hawaiian-Style: Kani Ka Pila Grille in the Outrigger Reef On The Beach is steps from the Halekulani (another fave of mine is their House Without a Key). The Kahala is a genteel place, a favorite of Jack Lord who used to live next door, and many kings, business titans and rock stars. I always get the best feeling dropping my car at the front with the valet and waltzing through the open air lobby to stand and marvel at the thousands of pieces of beach glass in the lobby chandeliers before making my way to a table in The Veranda lounge for live piano jazz weeknights and Hawaiian Music on Saturdays and Sundays. The Perfect “Tropical Sunset” Afternoon Tea at Four Seasons Resort Chiang Mai
Situated in the countryside of Mae Rim valley, Four Seasons Resort Chiang Mai is perfectly located within close proximity of the region’s best fruit and vegetable farms. As leaders in sustainable practices in Thailand, these farms provide the highest quality of produce that make for perfect experiments in Executive Pastry Chef Yanisa Wiangnon’s kitchen.
“We source passion fruit, mango, longan and lychees within minutes of the Resort. Our partnerships with small scale farmers give us an opportunity to truly focus on the quality of produce,” shares Yanisa, who has created a delectable new afternoon tea menu using the freshest tropical fruits. With no added colours or flavouring, each dish is brought to life with the perfect pairing of textures, giving guests a true taste of Thailand’s tropical bounty.
Starting off with the sweet-tangy passionfruit Sorbet, Yanisa then showcases how savoury and fruit combine in recipes such as salmon souffle with young coconut and mango shrimp roll. “I like to bring Thailand’s traditions to the fore in my recipes,” she smiles. “Spring rolls are such a favourite here – the sweet and spicy flavours of the mango shrimp roll are just the perfect ode.” The souffle too, is inspired by the Thai hor-mok – light and fluffy, best when eaten hot-out-of-the-oven.
Is It a Longan or a Lychee?
Often mistaken for each other, longans and lychees have very distinct flavours. Yanisa’s scones made with longans and mini cakes with lychees truly bring out the flavour of each of these tropical fruits. “The longan's chewy sweetness with clotted cream or the organic Four Seasons Resort Chiang Mai strawberry jam is a must-try,” she grins. The mini cakes on the other hand, are shaped like lychees and served with white chocolate mousse and lychee confiture, satiating any lychee craving one may have.
Rambutan or Durian – What’s Your Pick?
The rambutan panna cotta is all about the texture: the smooth, velvety cream holds up in a spoon but melts in the mouth, while the rambutan on the top adds that perfect sweet and juicy flavour. For the bold and out-there, Yanisa’s signature durian salted cheese tart is recommended. It’s not just any durian that this expert pastry wiz uses. “I selected durian mhon-thong for its rich and sweet flavours,” she explains, “Don’t worry about the smell, go for the flavours - if you are looking for something not-too-sweet, then this should be your pick.” Topped with salted egg, these tarts surprise with a medley of flavours and textures to end the afternoon.
“I love using tropical fruits in my desserts as they naturally lend the warmth, sweetness and sour flavours that make for a perfect pastry,” shares Yanisa. “Come try these exotic flavours and more, overlooking the lush tropical paddies and enjoy that perfect ‘tropical sunset’ with us.”
This Boozy Cupcake Recipe Will Give You Drinks and Dessert in One Bite
Prohibition Bakery, New York City’s original boozy cupcake company, was established on the Lower East Side in 2011 by classically trained chef Brooke Siem and baker-and-bartender Leslie Feinberg. The concept was invented entirely by accident amidst a Google chat in which Siem suggested getting 𠇍runk while baking to take the edge off." The duo has since created miniature, baked versions of their favorite cocktails for a living, and recently came out with a cookbook, Prohibition Bakery ($13 amazon.com), so you can whip up these tiny tipsy treats at home. “We’ve created 55 original recipes just for you,” write Siem and Feinberg, “Which means you have 55 opportunities to impress your friends or your mother-in-law.” To begin, check out the Mai Tai recipe below.
Makes: 60 mini cupcakes
1⅔ cups all-purpose flour
1½ tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup plain yogurt
2½ tbsp olive oil
2 tbsp coconut oil
1 cup granulated sugar
1/4 cup orange juice
2 tsp orange zest
1 mini cupcake tin and paper liners
1 cup Pineapple Sauce (see below)
1/4 cup golden rum
1 stick butter, unsalted
1 lb confectioners’ sugar
1/4 cup coconut rum
4 tsp grenadine
Pineapple Sauce (makes 3/4 cup)
1 cup diced pineapple
1 cup sugar
1. To make the cake: Preheat the oven to 325ଏ. Line mini cupcake tins with paper liners.
2. Place flour, baking powder, baking soda, and salt in a bowl and combine. Set aside.
3. Combine yogurt, olive oil, coconut oil, sugar, orange juice, and orange zest in the bowl of a stand mixer and beat until incorporated.
4. With the mixer on low speed, slowly add the dry ingredients to the wet ingredients in the mixing bowl.
5. Mix until just combined, taking care not to overbeat.
6. Fill the cupcake tins to the halfway point.
7. Bake for 10 minutes. Let cupcakes cool completely on a wire rack before filling or frosting.
8. To make the Pineapple Sauce: puree 1 cup pineapple. Heat pureed pineapple and sugar in a saucepan over low/medium heat.
9. Cook for about 5 minutes, or until it reaches 220ଏ. The mixture will be very thick.
10. Remove the mixture from heat and transfer it to an airtight, heat-proof container. Allow the mixture to cool slightly.
11. To make the filling: Whisk the Pineapple Sauce until smooth.
12. Add golden rum 1 tbs at a time, stirring thoroughly between additions.
13. Transfer the Pineapple sauce/rum mixture to a squeeze bottle.
14. To make the frosting: With an electric mixer, beat butter with the paddle attachment until fluffy.
15. With the mixer on low speed, slowly add confectioners’ sugar until fluffy, with no lumps or air bubbles.
16. Transfer the frosting to a piping bag.
17. Assembly: When cupcakes are cool, core each cupcake with a small pastry tip. If you don’t have a pastry tip, poke a hole in the middle of the cupcake with a narrow-bladed knife (a steak knife will do).
18. Fill the cavity with the Pineapple Sauce/rum mixture, taking care not to let it overflow.
19. Frost as desired. Garnish with a cherry (optional).
