How to prepare baked chicken with tomato sauce
Although I used a grilled chicken for this recipe, I recommend using only thighs. They come out much tastier than the breast. If you still want to use grilled chicken - I only used the whole thighs and the whole chest (the back and wings go very well for a chicken soup). The chest is placed with the skin upwards and the thighs with the outer part upwards.

Insert the tray into the preheated oven at 130 ◦C (for some ovens it is the minimum value). Leave for about 4 hours.

Grease the thighs with sauce from time to time - first about an hour and then about every 30 minutes.

When you grease the thighs you can mix a little in the sauce (if possible).

If you do not eat it all at a table, you must remove the bay leaves.

The costs for 5 servings of baked chicken with tomato sauce are about 28-30 RON (2017 prices).

How to serve
Serve hot with the sauce in the pan. The gasket is at your choice. It is recommended to consume it without skin.

4. Place the boiled potatoes in a heat-resistant tray, season with salt and pepper (if they are not salty enough from the water in which they were boiled), add the fish onion and 2/3 of the aromatic oil prepared in point 3. Mix well, distribute the oil evenly.


5. In the pan, on top of the potatoes, arrange the spiced chicken legs and cherry tomatoes. Sprinkle everything with the remaining oil with basil and garlic.

6. Place the tray in the preheated oven at 190 degrees Celsius, at an average height. Bake the thighs (and everything around them, obviously) for 1 hour. After 30 minutes, turn the chicken legs to brown evenly. Finally, the thighs should be reddish and with crispy skin. The tomatoes will be incredibly sweet and the potatoes will absorb all the flavors, perfectly complementing the food. We can refresh the food, at the end, with some fresh basil leaves. I promise you a lunch that will smell like summer and good at home.

While the legs are cooking, prepare the sauce: crush the rest of the garlic cloves and rub them with a little salt and 3-4 teaspoons of oil, as we do with mayonnaise. Chop the tomato pulp as small as possible, then mix it with garlic, coriander, basil, sugar, salt and pepper.

Put the tomato sauce over the thighs and put it back in the oven for another 5 minutes covered with foil.

Then remove the foil and let it cook for another 10 minutes, or until the chicken legs are slightly browned.

We serve them immediately, with a garnish of potatoes, rice or pasta.
