I love Thai curries. The aroma alone of creamy coconut milk with the slight heat of the pungent curry spices makes my mouth water. I will often add lamb coupled with whatever vegetables I have on hand and simmer the mixture together until meltingly tender. Alone, a curry is a hearty alternative to a bowl of soup. For something even more substantial, serve it atop a cup of brown rice cooked with a bit of coconut oil and coconut milk, for added flavor. Added benefit of this recipe? It cooks in the same amount of time it takes to cook rice. While I used lamb, onions, and bell peppers in this curry, you can really use whatever ingredients you have on hand. Skip the takeaway – this classic Thai red curry recipe is simple to make at home. Red peppers and sugar snaps are added alongside the chicken for an extra helping of veg, plus this delicious one-pot dinner is ready in just 30 minutes.
- Heat the oil in a large frying pan over a medium-high heat and add the onion. Cook for 3 mins, then add the garlic, ginger, lemongrass and red curry paste. Cook for 1 min, then add the red pepper and chicken. Continue to cook for 4-5 mins, stirring occasionally, until the chicken is golden brown.
- Pour the coconut milk and chicken stock into the pan. Bring to the boil, then simmer for 5 mins. Add the sugarsnaps and continue cooking for a further 10 mins, until the chicken is cooked through.
- Remove the pan from the heat, remove the lemongrass and add the fish sauce. Scatter with coriander and serve with rice.

China’s Influence on Thai Food
A huge group of Thai dishes are adaptations of Chinese ones. Hokkien immigrants started arriving in the 15th century later, a Thai Chinese community started coalescing around Teochew immigrants. Wok cooking is the gift of Chinese cooks. So is deep-frying, many noodle dishes (eaten with chopsticks), soy sauce, and the fermented bean paste called taochiao. The typical Thai breakfast chok, or rice porridge, has Chinese roots, as do many other dishes.
Naam Jim Seua Rong Hai – (Tiger Tears Sauce)
This sauce has several regional variations, and this recipe is for the Korat version
The two most important variations are: (a) it can be made with a mixture of fresh chopped chilis and powdered chilis, and (b) it can be made with lime juice instead of tamarind juice.
1 tbs prik phon (powdered red ‘birdshit’ chilis)
5 tbs naam makham piag (tamarind juice)
1/4 cup naam plaa (fish sauce)
khao koor (see method)
1-2 tbs naam tan paep (palm sugar)
First in a medium hot wok or skillet, toast 3-4 tablespoons of uncooked long grain rice until golden, then cool, and grind to a coarse powder in a mortar and pestle, food processor or spice mill. This powder is known as khao koor. Any excess will keep indefinately in a well stoppered container.
Grind dried red chilis to a fine powder, first breaking them, and shaking out and discarding any loose seeds. You will need about a cup of powdered chili (or reduce the other quantities accordingly).
Add about 1 tablespoon of khao koor to the chilis, and then add tamarind juice and fish sauce, in the proportion of three parts tamarind juice to one part fish sauce, stirring until the mixture forms a thin paste of the consistency of tomato ketchup.
Add a little palm sugar to your personal taste.
This Thai sauce recipe will keep for 3-4 weeks in a well stoppered container in a refrigerator.
Tips for Making Coconut Curry Shrimp
PLEASE TAKE NOTE! There have been some comments that the dish is too salty. I believe this is from using a lesser quality fish sauce, which will lend a saltier taste. Please use a high quality fish sauce like the one I recommend, or add just 4 tablespoons of sauce and then taste it, and add more to your liking.
Use fresh or dried ginger in this dish. I’ve used both. If using fresh, use 1 1/2 tablespoons minced ginger and cook it with the peppers and onions and omit the dried ginger from the coconut milk mixture.
I like Key West Pink Shrimp in my shrimp dishes. In my opinion, they’re sweeter and more flavorful than striped or tiger shrimp that are typically farmed. I find the wild caught Key West Shrimps in the freezer section at my local Kroger (under the Private Selection brand).
Keep the tails. I like to leave the tails on this dish for presentation sake, but if you want to, feel free to remove the tails from the get go.
Serve over brown rice for another layer of nutty flavor. If you’re a white rice kinda eater, go for it. Cellophane or rice noodles would be really good underneath too, or spiralize a few zucchini noodles to keep the veg-love flowing.

Tumeric common in green curry paste?
Can anyone offer any insight as to whether turmeric is commonly found in green curry paste? I bought Thai Kitchen Green Curry Paste and the ingredient list in the jar doesn’t mention it, but does say “spices.” When I check the ingredients list online, it says “ Chili, lemon grass, garlic, galangal, salt, onion, pepper, rhizome, lime and peanut oil.“ I’m wondering if that rhizome is generally accepted to be tumeric root in Thai cooking, or if it is equally likely to be ginger or some other root.
I have long known that tumeric gives me migraines. I have one coming on after eating this paste and I’m wondering if it is tumeric in this product causing the reaction, or if I have a similar sensitivity to some other root, such as the galangal, that I need to look out for in future.

Tips and Secrets
Essential step to make a good curry with great taste is frying curry paste in oil. Fry curry until you see oil separates from the curry paste.
Prior to adding fish sauce, taste your curry. There is a great amount of salt in store bought curry paste. Skip fish sauce if curry tastes enough salty. If using fish sauce use it as needed. (Note – use the amounts in the recipe as a guide. Curry recipes are greatly flexible).
Kaffir Lime Leaves have bold flavors. Crush leaves before adding to curry. Crushing kaffir lime leaves with release all it’s aromatic oil to the curry. Lime leaves can be eaten from the curry, but I prefer to take it out. It turns a big tough after cooking, plus it’s has very strong flavor.
Use Panang curry paste depending on your spice preference. Start with 2 tablespoon of curry paste first, then gradually add as per your spice tolerance level. I like it spicy so I used up the entire jar which was about 4-5 tablespoon.
