Fasting donuts are delicious during fasting periods. Even if they do not contain eggs and milk, the leavened dough that we flavor with vanilla sugar and lemon peel will be a real feast when you have a craving for something sweet.
Mamaie prepared these donuts without ever weighing the ingredients. intuition and experience helped her a lot, but also the lustful mouths that begged her to prepare more fluffy donuts. I weighed the ingredients today, just to help you a little if you started on the road and you don't know how to start.

25 gr of fresh yeast
1 sachet of vanilla sugar
half a teaspoon of salt
250 ml of hot water
520 gr flour
50 ml oil + frying oil

I first prepared the mayonnaise by mixing the yeast with a tablespoon of sugar and then with warm water and a few tablespoons of flour to form a dough as thick as sour cream. Leave to rise for a few minutes.
The flour is mixed with sugar, vanilla sugar, half a teaspoon of salt, lemon peel and mayonnaise. Knead by adding oil gradually until a compact dough is formed that no longer sticks to your hands and leave to rise until it doubles in volume.

Spread the dough on the worktop greased with oil and spread with your hands and it should be about 5 mm thick.
Cut the donuts with a metal ring or a glass and let them rise for 15-20 minutes.
We put oil in a cast iron pot (tuci) and let it heat well and fry the donuts on both sides for a few minutes. We don't set fire too much because the donuts will brown on the surface and remain raw inside.

In a large bowl put flour, sugar, dry yeast, blender potatoes, egg yolks, butter, warm milk and salt powder. Knead the dough for about 10 minutes. It would be best to knead the dough with a mixer with kneading hooks. The dough will be slightly sticky.

Let it rise for 40 minutes in the same bowl in which it was prepared. Preheat the oven to 35 degrees for a few minutes. Cover the bowl with a cloth and put in the oven.
