The quinces are cleaned of down and washed well.

Remove the hard part with seeds and cut into small cubes.

I cut into cubes until 2 kg were collected.

Quince oxidizes quickly, but you don't have to worry that when it boils, it returns to its color. (seen in the picture)

Boil the sugar with 1 l of water in a larger saucepan and when it starts to boil, let it boil for 10 minutes.

Put the chopped quinces in boiling syrup and mix until it starts to boil again to discolor the quince.

Leave it to boil for 1.5-2 hours until it reaches the desired consistency.

Remove the formed foam and mix from time to time.

Add the vanilla sugar and lemon juice and cook for another 5-10 minutes.

If the sample with a drop on the plate is good, it is ready.

Cover the pan with a wet towel and leave to cool.

Put in warm sterilized jars.

Put the lids, the label and the pantry.
