  1. Preheat oven to 200 C / Gas 6. Lightly grease 2 mini muffin tins.
  2. Sieve the flour, add salt and rub in cold butter. Add sugar and egg yolks and work the mixture into a firm dough, handling as little as possible. Cover with clingfilm and place in the fridge for 30 minutes.
  3. Roll out the chilled pastry thinly (about 3 or 4 mm) and place over lightly greased tin; press gently into the holes and use a knife to cut around and remove any excess pastry.
  4. Knead pastry scraps again and line another tin until all the pastry is used. It's best to bake them blind to prevent air bubbles. To do this, prick the pastry with a fork, cover with foil and pour in some dried beans.
  5. Bake for 8-12 minutes. Transfer to a cooling rack. When cold, fill them with whatever you like.

Tip

If you want to bake the pastry cups with a filling; cook them for 8 minutes before adding the filling. Then finish baking.

Agreed! the pastry is delicious once cooked. However, I struggled with the fact that one had to kneed it into a dough once the egg yolks went in because I have slighlty arthritic fingers and just could not manage to squeeze the mixture enough to make the dough. I therefore had to put some water in to help. The pastry was still delicious though!-22 Dec 2013

  • 4 cups all-purpose flour
  • 1 ½ teaspoons salt, or more to taste
  • 1 ½ cups butter
  • 3 eggs
  • 1 cup cold water

Mix flour and salt together in a large bowl. Cut butter into the flour mixture until it is the consistency of breadcrumbs.

Lightly beat eggs together in a separate bowl stir into butter-flour mixture. Add water and mix just until incorporated, using your hands to bring dough together.

Turn dough onto a floured work surface and cut into 4 portions. Refrigerate dough for 15 to 30 minutes before using.

Precooking the dough for around 7 to 10 minutes before adding the filling will keep the pastry in shape and will stop it from going soggy and that’s how your pie will result in the best flaky pastry. Cook the bottom, add the filling and then the top and cook again.

Add a little flour to your rolling pin and flat board when rolling out the dough (to stop it from sticking).

Place your pastry between 2 parchment paper, bottom and top, and start spreading it with the rolling pin, that’s how you get it even on all sides.

To make more or less, remember the proportions - half fat to flour - and don't add too much water or the pastry will be hard. If other dry ingredients are included in the recipe, add them at the same time as the salt.

Wrap in plastic wrap and allow to rest for at least 15 minutes in the refrigerator. It can be left in the refrigerator for up to 2 days. Alternatively it can be frozen until ready to use.

Once you have the basic mixture you can flavor it with toasted ground spices, chopped fresh herbs or toasted and finely chopped nuts.
