  • 2 eggs
  • 6 tablespoons sugar
  • 150 ml of hot water
  • 5 tablespoons melted butter
  • 550 g flour
  • 1 sachet of baking powder
  • 400 g cherry jam
  • grated lemon and orange peel
  • vanilla and rum essence
  • large ground walnut
  • vanilla powdered sugar

RECIPE PREPARATION Cake with cherry jam, walnut and grated dough:

In a large bowl, beat the eggs with the sugar, the essences, the grated lemon and orange peel, the boiled water, then add the sifted flour together with the baking powder.

From the obtained dough we keep about 150 g which we mix with the flour to obtain a hard dough that can be crushed (I didn't manage to put it on the grater!).

Line a tray (25/35 cm) with baking paper and spread the sheet of dough. Cover with jam, then sprinkle with walnuts and crumble the preserved dough. Bake for 30 minutes, leave to cool, then powder with sugar and portion. It `s very good!

Method of preparation :

In a bowl sift the flour, then add powdered sugar, salt powder, baking powder and soft butter at room temperature. Knead with your fingertips until you get crumbs, then add the egg, egg yolk and vanilla sugar. Knead enough to make a dough, which we then divide into 2: a larger ball of dough and a smaller one.

We spread the big ball of dough in the tray (20 * 30 cm) lined with baking paper, then we keep the tray with dough and the small ball of dough wrapped in food foil, in the fridge, for about 30 minutes. Grease the dough with strawberry jam (or whoever wants apricots, cherries, raspberries & # 8230), then grate the remaining dough on the large-mesh stainless steel grater. Bake the pan in the preheated oven at 180 degrees Celsius for about 30-35 minutes (until the dough crumbs turn golden).

Let the cake cool, then slice and serve. Whoever wants can powder it with powdered sugar.

Mix the soft butter (left at room temperature) with the powdered sugar until creamy. Add the vanilla essence, lemon peel, egg yolks and whole egg and mix again until you get a frothy composition. Add the sifted flour together with the baking powder and mix until we have a homogeneous dough, which does not stick to the hands.

One third of the dough is wrapped in cling film and placed in the freezer. The rest lies in the tray (20/30 cm) lined with baking paper.

Beat the egg whites with a pinch of salt, then add the powdered sugar, spoon by spoon, and mix until you get a firm and glossy meringue, which makes spikes when you remove the peels from the mixer. Ground walnuts, cocoa and magiun are mixed in a bowl. Add the meringue in several portions, mixing gently with a spatula, with movements from bottom to top. Spread the cream in the pan over the dough, in an even layer. Remove the cold dough and scrape it over the cake, using a large-mesh grater.

Put the pan in the oven over medium heat (160 degrees electric oven with ventilation) for about 30 minutes, until cake with jam and grated dough it is browned.

Leave the cake to cool a little in the pan, then take it out on a grill and let it cool very well. It is portioned as desired.
