Excellent recipe!!! My husband and I both loved it!!! I added some sun dried tomatos and didn't have sherry so I just used some red wine that I had instead. My husband and I both love garlic, so I added extra. We're having it for dinner again tonight -second time this week!-16 Jul 2005

Could I BE (<— Chandler’s voice) any more excited to tell you about a super simple dinner that involves tortellini pasta, basil pesto, and chicken?! NO. Definitely not. Know why?

  2. It’s easy and quick thanks to Buitoni. With the hectic upcoming Holiday season, YOU (we) need easy and fast, but made at home.
  3. It’s lighter. Yes, it is creamy, but a lightened-up creamy, you’ll see.
  4. It’s delicious! I said that once, but it deserves a second mention.

Recently, my sister and I were discussing the importance of including protein and veg in our kids’ favorite pasta dishes, and throughout our talk, I mentioned to her a program called, Balance Your Plate. This is Nestlé’s educational program designed to help people build nutritious, delicious and convenient meals that meet the Dietary Guidelines for Americans by pairing frozen and refrigerated prepared foods with fruits, vegetables, whole grains, lean protein and low-fat dairy.

Following that advice, I could certainly do only one thing, and that would be to push myself into the kitchen and create this Easy Creamy Chicken Pesto Tortellini.

First of all, my mouth is in love. With cheesy tortellini. AND basil pesto. I could eat that stuff straight from the container.

Basil pesto can be used as an accompaniment to my teaspoon at any time, but it also tastes delicious stirred through a big bowl of pasta. Obvi. Buitoni’s Pesto with Basil is exceptionally creamy, and a bit chunky (thanks to the pine nuts), but it’s also very, very tasty and goes great with creamy sauces, dressings and marinades.

Then we have the tortellini. The very soft, pillowy, Three Cheese Tortellini. They are SO good! Buitoni’s cheesy tortellini are filled with three cheeses including yummy and fresh creamy ricotta, aged Parmesan, and Romano.

Really, this dish might not get much better than this.

Well… Unless you combine all of that in one pan and make a dinner out of it. Then you’re definitely winning.

Here’s how this will all go down in your kitchen:

First you’re either going to use leftover cooked chicken breasts, rotisserie chicken, OR cut up a few chicken breasts and prepare it yourself, just as I did here.

In the meantime, you’ll prepare the tortellini – that only takes about 7 minutes – and you will also get the sauce going. We’re talking about some chicken stock, basil pesto, bit of parm cheese, and cream cheese.

All of that is going to go over our tortellini, chicken, and spinach. Then, simply enjoy this awesome chicken pesto tortellini.

Pretty basic, but easy. I grilled the kebabs on our Traeger. My young adult daughter felt the marinade was "too lemony" and she didn't like the yogurt flavor in the pesto sauce (which I doubled) and served with egg noodles. Next time I will serve the kebabs with rice and add some mushrooms and maybe some zucchini.

Made this, tonight, with my homemade pesto. It was a lovely change from my usual kebab recipe and we loved it.

This review is for the veggie portion of the kabobs and the creamy pesto. We didn't use chicken as I had other meat to use up. The veggie kabobs were delicious enough! I prepped them an hour in advance so they could sit in the marinade and soften up a bit before skewering and grilling them. (I'm sure broiling them would be fine too, but oh, that charcoal fire taste!) The creamy pesto was wonderful. I only had artichoke pesto on hand, but the sauce was very good. It was a perfect complement to the grilled veggies. Next time I will try the chicken and a basil pesto, but definitely grilled. Easy to do, easy to vary, and totally tasty.

We wanted to make it healthy (sans chickens) and it turned out GrEaT! How to serve it

Fennel tastes a bit like onion, or perhaps even celery, but without the onion or celery flavour! The texture is similar to onion or celery, but it has a very subtle aniseed flavour similar to what you get in some Italian sausages. Which is why it works so well with sausage recipes!

If you find that you really like this flavour, definitely add the optional fennel seeds to your bolognese sauce. Pappardelle is a bit like tagliatelle but wider. As ragu sauces like this sausage bolognese are super rich and tasty, I prefer to use pasta that has a bit of thickness and &lsquobite&rsquo to it.

Fun fact: the word pappardelle comes from the Italian verb &lsquopappare&rsquo, which means &lsquoto gobble up&rsquo!

If you can&rsquot find pappardelle, any larger pasta shapes will work well. In a pinch, even plain old spaghetti will be fine.

I usually use red wine for a deep, rich flavour. But white is fine too &ndash just use whichever you have on hand!

Alternatively, if you&rsquod rather not use wine at all, you can use beer or even a rich, good quality meat stock/broth instead.

This recipe is quick and easy to make just on the stovetop. However, I do usually make it in my electric pressure cooker these days. It&rsquos a bit quicker, but also once you&rsquove pressed the button on your machine it&rsquos totally hands off.

If your pressure cooker has a &lsquobolognese&rsquo setting, that&rsquos perfect! Otherwise, choose &lsquocustom&rsquo and manually set it for 20 minutes followed by &lsquoauto quick&rsquo pressure release. You may want to reduce the liquid for a few minutes once it&rsquos cooked using the &lsquoreduce&rsquo or &lsquosaute&rsquo setting. Sometimes I find I don&rsquot need to do that.

Yes! This bolognese sauce freezes exceptionally well. Simply let cool and freeze in sealed glass containers.
This recipe is very easily doubled or even tripled if you want to stock up your freezer!

You can also make a pasta or gnocchi bake out of this sauce. Simply stir through cooked pasta or raw gnocchi (no need to pre-cook the gnocchi). Sprinkle panko crumbs and parmesan on top and bake for 30 to 40 minutes at 180C/355F until golden on top and bubbling. Alternatively, wrap well and freeze. Let defrost before reheating in the oven.
