Many martyrs come out of this amount of flour.

First make the yeast mayonnaise + 1 teaspoon of sugar + 50 ml of warm milk (be careful not to be hot, because the yeast is scalded and does not grow).

Leave for 15 minutes.

Melt the sugar and salt in the warm milk. Sift the flour (this is done not only to remove all the impurities from the flour, but also to aerate it, so that the fluffier crust comes out).

Mix flour with mayonnaise and warm milk. You can do it manually, in a robot with a big tub, or in a bread machine. After mixing, add eggs and spices.

From now on I kneaded my hand.

Add 1 tablespoon of oil and stir until it enters the shell. Continue until all the oil has been used. The kneading lasted about 40 minutes.

More like when you shoot beasts, believe me. All the respect for those who make Easter and Christmas cakes!

I made a ball out of the dough and put it in a large bowl. I let it rise until the crust doubled in volume.

I lightly greased the table with oil and took the crust like a ping-pong ball. From it I stretched a tube about 30 cm long from which I made 8s. I put them in the parchment paper tray and baked in the preheated oven at 200 C for 30 min. While they were baking, I made the syrup. I boiled the sugar with water for 5 minutes, then I added the flavors (vanilla essence and a little rum).

After removing the martyrs from the oven, while they were still warm, I soaked them in syrup for 1 minute on each side. I greased them with honey and sprinkled chopped walnuts. And I ate them with a lot of appetite.

I will use a food processor to knead the dough. That way everything will be much easier!

First dissolve the yeast in warm milk. Put 2-3 tablespoons of sugar and 2 tablespoons of flour, then let it rise for 15 minutes in a warm place. Put melted butter, beaten eggs, remaining sugar, a pinch of salt, rum essence and grated lemon and orange peel in the bowl. Start the robot at low speed, and when the ingredients have homogenized, add the mayonnaise, then the flour, little by little, until the dough begins to bind. Leave to knead for 15 minutes, then remove the bowl and cover it with a clean towel. Let it rise for an hour - an hour and a half in a warm place.

Meanwhile, prepare the syrup: put the water in a saucepan, add the sugar and put it on the fire, stirring with a whisk. Add the cinnamon stick, the anise stars and the allspice seeds. Leave it on the fire until it starts to boil and the sugar is completely dissolved. Turn off the heat and let the syrup stand for 5-10 minutes, then add the rum essence and grated orange peel. You can put whatever flavors you prefer! Set the syrup aside and let it cool!

When the dough has risen, take it out of the bowl and pour it on the table sprinkled with flour. Divide it into small piles and form sticks, then shape octopuses. Place the martyrs in trays lined with baking paper, cover them with clean towels and leave to rise for another 30 minutes.

Mix the two yolks with the milk and grease the martyrs with a brush, then put the trays in the preheated oven at 180 degrees and leave them for about 30 minutes, until they swell and brown slightly. Remove the trays and let them cool a bit, then dip them in the syrup and place them on a plate.

Martyr

The Christian holiday of the Holy 40 Martyrs of Sebastia, celebrated on March 9, overlapped with the beginning of the traditional agricultural year before Christianity and generated a traditional holiday in Romania and the Republic of Moldova: martyrs or The grinders. On that day, there is a great cleaning in the households, incinerating the collected garbage only with fire brought from the house, in order to bring the heat from the house and outside. In the popular belief of the Romanians, the day of the Holy Martyrs ends grandma's days, capricious days of the twinning of winter with spring, giving way the days of the elders, hot days. Therefore, on this day there are many rituals to drive away the frost, such as: hitting the ground with sticks or maces, uttering spells, so that the heat comes out and drives away the frost, or children's play over the fire. [1]

On the day of the Martyrs, in the popular belief, the tombs and the gates of Heaven are opened, and the housewives make, in honor of the saints, 40 rolls called sanctify, martyr or fir trees.

In Moldova, the martyrs, called saints, have the shape of the number 8, a stylization of the human form, and are baked from cake dough, then greased with honey and walnuts. [1]

In Dobrogea, the same anthropomorphic form is preserved, but the martyrs [2] are smaller and are boiled in water with sugar, cinnamon and walnut, symbolizing the lake where the Holy Martyrs were thrown. In Muntenia, in addition to the usual fir trees, a Forgotten for the dead, a larger but blind martyr, which the children play around the fire and which is dedicated to the dead who were forgotten during the year.

Martyrs with walnuts. 5 simple recipes for housewives

Tomorrow is March 9. In the calendar, next to the day of March 9, St. 40 martyrs is written. It is, therefore, the day when we eat martyrs. In some parts of the country they are called saints. If on March 8, women are celebrated, it is said that on March 9, men drink 40 glasses. Until then, let's see some recipes for martyrs with walnuts.

They are prepared only once a year, on the occasion of March 9th. Then, in the calendar are mentioned the 40 saints of Sevastia. Martyrs or millers prepare in the form of 8, as this figure symbolizes balance.

In the Dobrogea area, the martyrs are smaller and boil in water with cinnamon, sugar and walnuts, symbolizing the lake where the 40 saints were thrown. Let's see some recipes.

The preparation method is identical to the one in the first recipe. Of course, we also see the version of martyrs as in Muntenia.

Ingredient:

  • 300 gr martyrs bought (from the category of the little ones, as much as a teaspoon)
  • a teaspoon of ground cinnamon
  • 55 gr larger chopped walnuts
  • 75 gr ground walnuts
  • 1.5 liters of water
  • 120 gr sugar
  • an envelope of vanilla sugar
  • a teaspoon of rum essence
  • a quarter teaspoon of sea salt

Method of preparation:

Boil the martyrs first. Don't forget to put a little salt and peel from a portico or a lemon in the water, together with the vanilla sugar and the classic sugar. When the water boils, put the martyrs and let them boil over medium heat. They are ready when they rise to the surface, ie in a maximum of 30 minutes.
Then the rum essence is incorporated. After 2-3 minutes, remove the martyrs from the water, put them in a bowl and sprinkle cinnamon and ground walnuts over them.

Moldavian martyrs (saints)

From the above ingredients, make a dough that is left to rise until it doubles in volume. Divide and make wicks that intertwine to form shapes. Place in the pan, let it rise and then grease with egg. Bake over medium heat until golden brown.

Make a syrup in which the martyrs are immersed until it absorbs the syrup, place it on the plate and sprinkle with walnuts and coconut (if you wish)

I made the double recipe for everyone

here I come with a clarification, you may have less milk than I wrote, the main thing is that when you knead you should not put the milk at once. I added honey to the dough, but the sugar doesn't have to work very well.
