Put the yeast soaked in a little warm water.
In a bowl put flour, salt, sugar, egg, butter, grated telemeau and soaked yeast. Start kneading by adding water little by little, until it is a compact dough and easy to shape. Leave the dough to warm for an hour.
After this time take pieces of dough and form pretzels according to the desired shape.
Grease the pretzels with beaten egg and sprinkle with sesame or poppy seeds and bake until golden brown.

Because my little boy likes this kind of pretzels found at a nearby pastry shop, I decided to make them myself.
- 500 gr. flour (+ 1- 2 tablespoons)
- 100 gr. butter
- 200 gr. sour cream
- 100 gr. sugar
- 2 eggs
- 1 sachet of dry yeast
- 1 pinch of salt
- rum essence.
- ground almonds
- 1 yolk
- 2 teaspoons cream
- 120 gr. sugar
- 60 ml. the water.
The leavened dough is divided (on the floured work surface) into 12 parts from which balls are formed.
Each ball of dough is spread out in a rectangle
which is greased with Nutella on one of the longer sides, and sprinkled with ground almonds.
Roll out the dough sheet, taking care to close the filling well and glue the edges.
Lightly roll out the roll, then twist it, then join the ends to form the pretzel.

We leave them for 10-15 minutes. in a warm place, then grease them with the yolk mixed with cream
and put them in the preheated oven at 180 & # 8304C for 25 - 30 min.
Meanwhile, prepare the syrup: put the water and sugar in a kettle on the fire, stirring occasionally. Let it boil for a while, then remove from the heat.
After they have browned nicely, take the pretzels out of the oven and brush them with the warm syrup.
How to make sesame or poppy pretzels?
Homemade crispy pretzel dough
Both milk and water can be used (if you have lactose intolerance). If you use water then the pretzels come out much crispier than those with milk that come out softer inside. You can also make a mixture of water and milk. For the dough, I first mixed the warm milk with the yeast and sugar, then I added 250 g of flour and I mixed it. I left everything on the table for 10 minutes.
I then added the oil, salt and mixed everything. Finally I put the rest of the flour. I kneaded everything for approx. 5 minutes with the robot (or 10 minutes by hand) until I got a soft dough that is already easy to work. I covered the pot with a transparent foil and left it to rise in a warm place until it doubled in volume (about an hour).
I rolled up the work table and then carefully spread the dough until I got a rectangle of about 40 & # 21560 cm. I cut thin strips of about 40 x 2 cm, which I then cut in two. You can use the pizza roll or the serrated roll for saltines.
I used 2 strips for each pretzel. I pulled their heads a little to lengthen them (carefully!).
I twisted each strip into a spiral.
Then I twisted them together and formed circles. I pressed lightly to stick the heads together.

I placed the pretzels in the tray and covered them with a towel so they wouldn't dry on the surface. I left them to rise until I made the second tray. In the meantime, I also started the oven at 170 ° C (heat up + down + ventilation) and the average stage for those with gas.
I beat an egg with a pinch of salt and two tablespoons of milk. I dipped the pretzels directly in the egg (I didn't grease them with the brush) and then I passed them through the sesame.

Homemade pretzels with salt. Pretzels and braids. I discovered this recipe about 3 years ago and I liked it so much that I kept making these pretzels. At first alone and for about 2 years now helped by my little boy (who is now 5).
I honestly tell you that I don't know how I am the next day because we never stayed! The culmination is that although I made pretzels so many times, I never got to pose for them. So I took my son and asked him to help me publish the recipe and we are very happy with it.

Browsing through my old cake book, I came across recipe of sesame pretzels, an easy recipe, with simple ingredients and available to everyone.
If you like homemade pretzels, I invite you to try them, they are so tasty, fluffy and full of delicious seeds.

- 600 g flour type 00
- 300 ml milk
- 20 g of yeast
- 3 tablespoons sugar
- 1 teaspoon grated salt
- 80 g butter
- For decoration

- Sesame seeds
The first step is to dissolve the yeast in water, then let it activate for 5 minutes. Then pour the water with the dissolved yeast over the flour and mix well. After we have mixed the dough a little, we add the salt.
Knead the dough for 10 minutes, until it is not sticky at all and becomes elastic. I added a little olive oil at the beginning because otherwise it would stick to my hands. After we finish kneading, leave it to rise for 45 minutes.
Meanwhile, bring the water to a boil, and when it starts to boil, add the baking soda. Boil the pretzels one at a time for 1 minute each.
After we have boiled them, we take them out with a spatula in a tray lined with baking paper. Sprinkle with salt and sesame seeds and bake for 12 minutes on high heat in the gas oven. Or, ideally at 290 ° until browned.
Our pretzels with salt and sesame are ready and have an extraordinary taste! You must try our recipe too! The only flaw in the recipe is that only 4 pretzels come out and you risk beating them! Good job and good appetite!
Cow telemea cakes - an inspiration from grandma's kitchen!
Try this recipe for delicious cakes with cow's milk, which has a fabulous taste just like the ones prepared by Grandma. From the first moment you start frying the first cake, your whole house will smell like a delicious aroma. It is best to cover them with a towel after frying them, so that their texture becomes much softer and softer.
- In a bowl, mix the flour, salt and baking powder, then add the grated telemeau and mix.
- Pour the yogurt on top, knead the dough well and let it rest for 10-15 minutes.
- Divide the dough into 6 pieces and form 6 balls out of them. Then spread each ball separately, to be about 5-8 cm thick and with the help of a fork prick the cake on the entire surface.

- The pretzels keep very well for 3-4 days, in a hermetically sealed bag. You can very well freeze them and heat them in the microwave. They are excellent hot, greased with a little butter.
