In a hot skillet, caramelize the onions with about 4 tablespoons of butter. Next add the garlic and sauté for 2 minutes longer. Deglaze the pan with the Worcestershire sauce, then stir in the green onion and season with salt and pepper. Cool.

Once the onion mixture is cooled, whip it into the cream cheese and sour cream until fully blended.

For the fried onions, mix the flour, spices, and seasoning together. Set aside. Heat about 1 inch of canola oil in a medium-sized skillet to 375 degrees. Soak the thinly sliced onions in milk, and then toss in the flour mixture until well coated. Fry until golden brown and crispy.

Grill the burger patties until cooked through, or until the internal temperature reaches 165 degrees.

Spread approximately ¼ cup of the onion cream cheese mixture onto the bottom of each toasted brioche bun. Set a burger on top of each bun and top with 2 slices of cheddar cheese, 3 slices of bacon, 1 tablespoon of A1 sauce, and a small handful of the fried onions. Top with lettuce & tomato and serve.

**Some of the stuffed burgers have ingredients that need to be mixed in with the ground meat as well so be sure to read the instructions for the stuffed burgers below before starting.

For all of the stuffed burgers you are going to season the meat with salt and pepper and form 8 to 12 patties (depending on if you want 4 larger or 6 smaller stuffed burgers). Place an indent with your thumb in half of the patties. That is where you will place the fillings.

Chicken Curry Stuffed Burgers Substitute ground chicken for the ground meat to make these stuffed burgers. Evenly mix the curry, scallions, cilantro, red bell pepper, and minced ginger into the ground chicken. Form the patties and evenly distribute the mango chutney and sriracha sauce on the indented patties. Top top each with another patty and press the edges together to form a seal. Cook on a hot grill for 6 minutes on each side.

Steak and Swiss Stuffed Burgers Mix the horseradish and steak sauce into the ground beef before forming your patties. Once you have formed your patties, evenly distribute the Swiss into the indents on half of the patties. Top each with another patty and press the edges together to form a seal. Cook on a hot grill for 3 to 5 minutes per side depending on desired doneness.

Bacon Cheddar Stuffed Burgers Evenly distribute the bacon and cheddar among the indented half of the patties. Top top each with another patty and press the edges together to form a seal. Cook on a hot grill for 3 to 5 minutes per side depending on desired doneness.

Wild Mushroom and Blue Cheese Stuffed Burger Mix the hot sauce into the ground meat to evenly distribute, then form your patties. Distribute the mushrooms and blue cheese evenly on top of half of the patties. Top each with another patty and press the edges together to form a seal. Cook on a hot grill for 3 to 5 minutes per side depending on desired doneness.

BBQ Gouda Stuffed Burger Evenly distribute the barbecue sauce in the middle of half of the patties. Top with the gouda. Then top each with another patty and press the edges together to form a seal. Cook on a hot grill for 3 to 5 minutes per side depending on desired doneness.

All burgers can be served on the bun of your choice. But toast them, they're better that way.

Awesome Burger Sauce Recipe

I’m a sucker when it comes to sauces, or burgers for that matter. Especially now that we are starting to see temperatures in the 60’s in Wisconsin. That temperature always has me thinking about grilling out for dinner, getting out from in front of the stove, or slow cooker for that matter. There is something about grilling that I really love. The preparation, the hot coals, the smokey smell, you know what I’m talking about right?

Well, I think that with any good burger, it deserves a really good sauce, and this sauce in particular is one of them. It’s vibrant in color, packs a ton of awesome flavor, and will have you wanting to slather it on pretty much anything. Yeah, it’s one of those sauces.

Awesome Burger Sauce Recipe

  • 1/2 cup fresh cilantro
  • 1/2 cup Italian flat leaf parsley
  • 1 cup olive oil
  • 1/2 cup vinegar
  • 5 whole cloves of garlic
  • 1 yellow bell pepper, seeds and stem removed, roughly chopped
  • 1/2 cup of mango, cubed
  • 1/2 tsp cracked black pepper
  • 2 tsp cumin powder
  • 1 tbsp mayonnaise
  • 1 tbsp Mexican oregano
  • 1/2 tsp salt, more to taste

To a food processor, toss everything in, and pulse until you have a really smooth sauce. Yep, that’s it. This is a flavor bomb. It’s a bit sweet, spicy, and has you wanting more and more.

Lather this stuff onto any burger (as you can tell by my burger, I was very generous), dip your fries into it, or use it on anything from eggs, to salads, to sandwiches. This one is a real winner. Hope you enjoy, and get those grills ready!

What the hell is huitlacoche?

This keto “carnivore” burger is a variation on something I’ve made many times. This time it features corn smut for no other reason than I love huitlacoche. Here, it’s in season right now. I spent just over a dollar on a bag of the freshest corn smut I’ve ever purchased I just couldn’t resist.

In the United States, huitlacoche is considered a corn plague even though it’s completely edible and extremely tasty. Even those who hate mushrooms, like me, tend to enjoy its flavor. It’s what happens when fungus grows inside an ear of corn. In Mexico, it’s a delicacy. One thing is for certain as far as I’m concerned it takes corn and makes it something much more interesting and much more nutritious.

Awesome Burger Recipes from the New Shake Shack Cookbook + Interview With Culinary Director Mark Rosati

You kind of knew something was up back in 2004, when the first Shake Shack opened up in Madison Square Park – and the lines stretched halfway to the Chelsea Piers. Danny Meyer was already one of NYC’s most exalted restaurateurs, with Union Square Cafe, The Gramercy Tavern and Blue Smoke to his credit. But this was his nod to the burgeoning trends of food trucks and comfort food.

Now there are 129 Shake Shacks (seriously, count them), from JFK Airport to Chicago to West Hollywood to Tokyo, Bahrain and Moscow. But oddly enough, nothing has really changed. The lines are still long, the devotees are just as devoted – and Danny Meyer is still one of our favorite New York restaurant honchos.

Naturally, there had to be the cookbook. And this month brings Shake Shack: Recipes & Stories to the bookshelves. No surprise, it feels as comfy and friendly as any of Mr. Meyer’s restaurants, a 131-page look inside the family, philosophy and, of course, the food that make Shake Shack a place that you just can’t not love.

We chatted about the book with Culinary Director Mark Rosati, who also shared with BlackBook the recipes for two of Shake Shack’s most popular burgers.
