Below, you’ll find wholesome vegan meals made with affordable and protein-rich whole grains, beans, and nuts. You’ll also see plenty of fresh, colorful produce, and occasionally some tofu. No funny meat substitutes here.

As a vegetarian, a lot of my recipes happen to be vegan, or would be if I simply left off a sprinkle of cheese or a fried egg. I’ve enjoyed a few too many heavy meals over the past few days, so I thought we could lighten up a little with my favorite vegan dinners.

I love the challenge of making my favorite recipes vegan, like when I figured out how to make the lasagna and enchiladas in my cookbook without the cheese. Honestly, the cheese-free variations are just as tempting as the originals. In total, the book offers 96 tested vegan/vegan-option recipes.

Vegan Lunch Recipes

A vegan lunch doesn't have to be complicated, it could be as simple as the leftovers from dinner last night or a quick veggie wrap.

Check out the following list for some of my tried and true easy vegan lunch ideas:

It&rsquos been a struggle. But over the years, I&rsquove learned several ways to get kids to eat their vegetables. Here are a few of my tips:

  1. Sneak veggies into their food. Most of the recipes below have sneaky ways to get veggies into cream sauces, &ldquomeat&rdquo sauces, veggie pasta, and more. One of my kid&rsquos favorite meals is this baked macaroni and cheese. They don&rsquot know it&rsquos filled with carrots, sweet potatoes, and onions!
  2. Serve a variety of meals. Throughout the week, we make a variety of meals. Some meals are specifically for the kids while other meals encourage them to be more adventurous eaters. And after a week of healthy eating, we wrap up the week with pizza. With a good mixture of meals, they become more open-minded and engaged eaters.
  3. Make them try everything. At this point, both my kids have a few vegetables that they absolutely love. My daughter would eat a bowl of snap peas every night and my son loves broccoli and green beans. If I didn&rsquot make them try everything that was on the plate, neither of them would have known how much they love these vegetables. When we eat dinner together, it is a rule that they try everything with an open mind before being excused.
  4. Have kids help prepare the meal. When my kids are part of the cooking process, they are much more eager to eat what&rsquos on the table. Recently they&rsquove become my salad maker, sautéer, spicer, garnisher, etc. As a result, they have become far more adventurous in their eating.
