These hearty and flavorful vegan recipes are perfect any night of the week

Many vegan meals are loaded with good-for-you ingredients like beans and vegetables.

Just because you’re cooking a vegan meal doesn’t mean your dinner can’t be hearty and flavorful. These recipes (that are completely free of any animal products) make the perfect dinner any night of the week.

Gluten-Free Vegan Stuffed Potatoes

This hearty vegan meal is packed with flavor, thanks to a blend of saffron, cinnamon, and cumin and a garnish of freshly chopped parsley.

Hearts of Palm Cake with Vegan Dill Mayo

Forget crab cakes; these vegan hearts of palm cakes are crispy on the outside, moist on the inside, and altogether perfect when paired with a vegan dill mayonnaise.

Rich Roll’s Ultra Meatless Tempeh Loaf

A filling and nourishing meal, this mock meatloaf is completely meat-free. It’s made with tempeh and flavored with earthy beets, sweet carrots, herbaceous cilantro, and smoky cumin.

This tasty cassoulet is loaded with vegetables and beans — sweet baby peas, celery, carrots, onion, tomato, and black-eyed peas — and topped with a delicious cornbread crumb topping.

Vegan Tomatillo Tacos

All the crunch of taquitos without any of the cheese or dairy products; what’s not to love?

29 Delicious Vegan Dinner Recipes

Below, you’ll find wholesome vegan meals made with affordable and protein-rich whole grains, beans, and nuts. You’ll also see plenty of fresh, colorful produce, and occasionally some tofu. No funny meat substitutes here.

As a vegetarian, a lot of my recipes happen to be vegan, or would be if I simply left off a sprinkle of cheese or a fried egg. I’ve enjoyed a few too many heavy meals over the past few days, so I thought we could lighten up a little with my favorite vegan dinners.

I love the challenge of making my favorite recipes vegan, like when I figured out how to make the lasagna and enchiladas in my cookbook without the cheese. Honestly, the cheese-free variations are just as tempting as the originals. In total, the book offers 96 tested vegan/vegan-option recipes.

These recipes are only a small selection of the vegan recipes on Cookie and Kate. Browse the vegan recipe index to see them all!

Roasting the vegetables, along with a trio of umami-rich ingredients (miso, mushrooms, and kombu), give this meat-free broth a deep, satisfying flavor.

For an even deeper, nutty flavor, toast the cashews first (or buy them that way, but make sure they’re unsalted). Skeptical? Think hazelnut coffee, but with cashews instead.

These vegan Nashville hot tofu nuggets by Lauren from Rabbit and Wolves are the perfect comfort food! They’re kind of like a vegan take on deep fried Nashville hot chicken!

But the best part is that Lauren’s tofu nuggets are super crispy and crunch all without frying! The sauce is a little sweet and very spice. BIG yum!!

Vegan Lunch Recipes

A vegan lunch doesn't have to be complicated, it could be as simple as the leftovers from dinner last night or a quick veggie wrap.

Check out the following list for some of my tried and true easy vegan lunch ideas:

  • Vegan BLT Sandwiches
  • Avocado Cherry Tomato Arugula Salad
  • Portobello Mushroom Quinoa Wraps
  • Southwest Quinoa Salad
  • Tomato Caprese Sandwiches
  • Vegan Grilled Cheese

It&rsquos been a struggle. But over the years, I&rsquove learned several ways to get kids to eat their vegetables. Here are a few of my tips:

  1. Sneak veggies into their food. Most of the recipes below have sneaky ways to get veggies into cream sauces, &ldquomeat&rdquo sauces, veggie pasta, and more. One of my kid&rsquos favorite meals is this baked macaroni and cheese. They don&rsquot know it&rsquos filled with carrots, sweet potatoes, and onions!
  2. Serve a variety of meals. Throughout the week, we make a variety of meals. Some meals are specifically for the kids while other meals encourage them to be more adventurous eaters. And after a week of healthy eating, we wrap up the week with pizza. With a good mixture of meals, they become more open-minded and engaged eaters.
  3. Make them try everything. At this point, both my kids have a few vegetables that they absolutely love. My daughter would eat a bowl of snap peas every night and my son loves broccoli and green beans. If I didn&rsquot make them try everything that was on the plate, neither of them would have known how much they love these vegetables. When we eat dinner together, it is a rule that they try everything with an open mind before being excused.
  4. Have kids help prepare the meal. When my kids are part of the cooking process, they are much more eager to eat what&rsquos on the table. Recently they&rsquove become my salad maker, sautéer, spicer, garnisher, etc. As a result, they have become far more adventurous in their eating.
