Separate the egg whites from the yolks.
Whisk the egg whites with a pinch of salt, then mix with the sugar until they harden like a meringue. Add the yolks, oil and essence and mix. After that, add the baking powder, grated orange peel and flour. The latter is added little by little and mix the dough with a wooden spatula, carefully, until smooth.
Add the dough in two trays greased with oil and lined with baking paper, stopping 2-3 tablespoons of dough, add water and cocoa and mix. The resulting composition is placed over the dough in the trays.
Put the trays in the oven until the cakes pass the toothpick test. When they are ready, leave the cakes to cool for 10-15 minutes, then remove them from the trays.
