The recently opened Hotel Cacao in Playa del Carmen is offering a sexy Valentine’s Day menu at its in-house Nibs restaurant. The menu is created by Martha Ortiz, one of Mexico City’s most inventive chefs, and Nibs chef Alejandro Cuatepotzo, formerly the chef at Hotel Matilda’s Moxi restaurant in San Miguel de Allende, one of the best hotel restaurants in the world. Cuatepotzo studied under Enrique Olvera, the renowned chef who operates Moxi and helms the famous Pujol restaurant, which The Daily Meal ranked #1 on its 101 Best Restaurants in Latin America and the Caribbean list, and Cosme in New York, among many other restaurants.

“Hotel Cacao promises the most sensual and mouthwatering Valentine’s Day through the masterful innovation of Martha Ortiz, the culinary skills of Chef Cuatepotzo, the chic and edgy style of Hotel Cacao, and the fun and romantic vibe of Playa del Carmen,” said Hotel Cacao Director Bruce James.

The Valentine’s Menu runs $1,800 pesos per person, or about $123 USD, including wine pairing. The menu is not yet revealed but will channel desire, mystery, and seduction into its courses.

Opened in October 2014, Hotel Cacao is a 60-room property located along Playa del Carmen’s exclusive 5th Avenue. Nibs restaurant offers an exciting and innovative marries the fresh, indigenous ingredients of the region with favorite Mexican seafood and meat dishes. The Hotel Cacao features an expansive roof-top bar where guests can order creative cocktails blended with Mexican ingredients — herbs, spices, flavorings, fruits and alcohols — and enjoy the panoramic views of Riviera Maya.

Champagne Mousse Cups

Champagne and sugar cane juice give this delectable mousse extra sparkle. Poured into chocolate cups and topped with strawberries, it’s a perfect Valentine.

Ingredients:
- 2 egg yolks
- 3 tablespoons evaporated cane juice or sugar
- 2/3 cup champagne
- 1/2 teaspoon gelatin
- 1 tablespoon water
- 1/2 cup heavy whipping cream

Directions:
Whip the heavy cream and refrigerate. Combine the yolks and evaporated cane juice in a glass or stainless steel bowl and whisk thoroughly until the mixture whitens. Add the champagne and whisk together completely. Place the bowl over a pot of simmering water and cook, beating constantly until the mixture thickens to the consistency of a light hollandaise sauce. Remove from heat and continue whisking for about 1 minute. Set aside and allow to cool. Combine the gelatin and water in a small bowl and let stand for 5 minutes to soften the gelatin. Heat the softened gelatin mixture until the gelatin dissolves and the liquid clears. Whisk the dissolved gelatin into the champagne mixture. Then fold in the whipped cream with the aid of a rubber spatula. Chill for 1 hour before piping the mousse into champagne glasses or chocolate cups. Garnish with fruit marinated in champagne and Macaroons.

This luscious Italian dish puts the express in espresso, with vanilla gelato and biscotti drowned with espresso and topped with caramel and whipped cream.

Ingredients:

4 oz. Vanilla Gelato
- 1 oz. Biscotti
- 1 mini Sugar Waffle Cone
- ¼ oz. Espresso Beans crushed
- 2 oz. Espresso chilled
- 1.5 oz. Caramel Sauce
- 2 oz. whipped cream
- 1 sprig of fresh mint

Directions:
Scoop vanilla Gelato into a 10 oz. clear rock glass. Crumble biscotti and sprinkle around gelato to where the pieces fall between the ice cream and the glass. Pour chilled Espresso over Gelato and then drizzle with caramel sauce. Fill mini waffle cone with whipped cream and place inside glass. Garnish with crushed espresso beans and fresh mint.

Decadent Avocado Brownie

Avocados, almonds, coconut, honey, and deep dark chocolate give an incredibly indulgent taste and texture to these decidedly decadent brownies. And you’ll never guess - they’re gluten-free.

Ingredients:
-
1/3 Cup Coconut Oil
- 5.5 Hass Avocados
- 2 tsp Vanilla Extract
- 8 Room Temperature Eggs
- 1 1/3 Cups Cocoa Powder
- 1 1/3 Cups Almond Flour
800 grams of 62% Dark Chocolate

Directions:
Grease a 9 x 13 pan with coconut oil and line with parchment. Double boil the dark chocolate and coconut oil together until the chocolate has melted. In a blender or food processor, blend avocados until smooth. In a mixer blend the avocados, honey and vanilla into the chocolate mixture. Mix in eggs gradually. Add almond flour and cocoa powder and mix until smooth. Pour into prepared 9 X 13 pan and bake at 375 for 30 minutes. The top should be firm to touch. Serve with cashew milk ice cream of your choice.

Heart Shaped Chocolate Cake for Two

Chocolate cake and cream are sealed with a rich ganache, topped with white chocolate and garnished with a heart-shaped strawberry.

Requirements:
-
Medium Heart Shape Mold.
- Chocolate Cake Recipe or Mix
- Ganache Pour Over
- White Chocolate bar or morsels.

Chocolate Cake:
Bake your favorite Chocolate Cake recipe, let cool.

Ganache Instructions:
Place 8 ounces semisweet chocolate, coarsely chopped chocolate in a medium heatproof bowl set aside. Place 1 cup heavy cream in a small saucepan over medium heat and bring to a simmer. Pour over chocolate and let stand until chocolate has softened, about 5 minutes. Add 1 tablespoon unsalted room temperature butter, and stir until smooth. Let cool slightly before using.

White Chocolate Drizzle:
Place 6 oz of white chocolate morsels in a heavy saucepan over very low heat, stirring constantly till the chocolate begins to melt. Immediately remove the pan from the heat and stir the chocolate until it is smooth.

Finishing Steps:
Dip fork into chocolate and drizzle over cake. Refrigerate until chocolate is set, about 10 minutes. Garnish with berries.

On Wednesday, restaurants in Doña Ana County got the OK from the state to reopen indoor dining at 25 percent capacity and expand outdoor dining to 75 percent capacity.

Alyssa Salcido, director of operation for Pecan Grill and Brewery called the easing of restrictions "exciting news for our industry.”

“It’s wonderful news, especially it just helps spread the love for Valentine's and just a little bit of weight off of the shoulders for the restaurants,” Salcido said.

Pecan Grill is offering a Valentine’s Day menu with “Love at First Bite” appetizers, “Spring of Love” salads, “Consuming Love” entrees and “Sweet Surrender” desserts. New Mexico pecans and Hatch green chile are featured in many of the dishes. They are located at 500 S. Telshor Blvd.

Amaro Winery on 402 S. Melendres St. is serving featured wines on Valentine’s Day and Acoustic Algorhythm will provide live music from 2 to 5 p.m.

Hacienda de Mesilla is offering a Arrachera Steak Dinner Box for two for $50. This includes Arrachera marinated steak ready to grill, mushrooms, mashed potatoes and s’mores. A mini Hibachi grill and fuel will also be provided. Call the restaurant at 575-652-4953 to order a box.

4 chocolate Valentine’s Day desserts

Whether you follow the Aztec reasoning or just know your loved one is a chocoholic, then these desserts are the perfect way to celebrate Valentine’s Day.

Chocolate mug cake

If you are a Keto fan, you will like this recipe as it is classed as a keto chocolate mug cake. And if you aren’t, well you can always swap the sweetener for the real deal!

Ingredients:

  • 1½ T. coconut flour
  • ½ t. baking powder
  • 1¾ T. unsweetened cocoa powder
  • 2 T. unsalted butter
  • 1½ T. low carb sweetener of choice*
  • 1 egg
  • 2 T. heavy cream
  • ¼ t. pure vanilla extract
  • ¼ t. salt

Optional:
Fresh sliced strawberries to serve

Add the first three ingredients to a small mixing bowl and stir to combine.

Melt butter in a small bowl in a microwave for several seconds. Add low carb sweetener and stir until completely dissolved. Add egg, heavy cream, vanilla extract, and salt to the butter mixture and whisk to combine.

Add wet ingredients to the dry and stir until thoroughly blended. Pour blended mixture into a mug or small microwave-safe container and microwave on high for 1 minute.

Remove from microwave and serve immediately with fresh sliced strawberries, if desired. Enjoy!

Chocolate macaroons

Macaroons are one of my favourite treats and while there’s a bit of work to do to make them, it is definitely worth it as a Valentine’s Day dessert!

Ingredients:

  • 1 ½ cups semisweet chocolate chips
  • 2 egg whites
  • ¼ teaspoon salt
  • ½ cup sugar
  • ½ tsp. vanilla extract
  • 1 ½ cups sweetened flaked coconut (greaseproof paper)

Preheat oven to 325°F. Line a baking sheet with parchment paper.

In a microwave-safe bowl, melt chocolate chips, stirring occasionally. Optionally, melt over a double boiler. Set aside to cool.

In a separate medium-size bowl, beat egg whites to a soft peak. Add vanilla and slowly add the sugar. Continue to beat until thick.

Fold in coconut & melted chocolate.

Using a teaspoon for small macaroons or tablespoon for large macaroons, drop one spoon full of batter onto a baking sheet for each cookie.

Bake for 15-20 minutes or until a toothpick inserted into the centre comes out clean.

Chocolate cherry brownies

This is a Paleo-friendly recipe if you are a fan of that approach. You can use fresh or frozen cherries, just let them defrost thoroughly and be at room temperature before mixing. And if you get extra moisture involved, just add a little extra cooking time.

Ingredients:

  • 4 large eggs
  • 2 T. + ¼ c. coconut oil, melted
  • ½ c. honey, preferably local
  • ¼ c. almond milk, unsweetened
  • 1 t. pure vanilla extract
  • ½ c. coconut flour
  • ¼ c. cocoa powder
  • ½ t. baking soda
  • ½ t. salt
  • 1 c. chopped, pitted cherries

Place top oven rack in centre position and preheat oven to 350°F. Grease an 8࡮-inch brownie pan with 2 tablespoons melted coconut oil and set aside.

In a large mixing bowl, whisk together the eggs, ¼ cup melted coconut oil, honey, almond milk, and vanilla until completely smooth. Set aside.

In a smaller bowl, combine the coconut flour, cocoa powder, baking soda, and salt. Gently fold the dry ingredients into the wet ingredients.

Add the chopped, pitted cherries and any juices (if using frozen cherries) and fold until combined. Transfer the batter to the prepared pan and place in the preheated oven to bake until the brownies are set, and a toothpick inserted into the middle comes out clean, approximately 25-30 minutes. (Cooking time will vary by oven. Check after 20 minutes and adjust cooking time accordingly).

Remove from oven and cool to room temperature before slicing into squares and serving. Enjoy!

Chocolate hazelnut truffles

No refined sugar here but plenty of sweetness from the dates and maple syrup. This mixture will make around 15-18 truffles.

Ingredients:

  • ½ c. raw hazelnuts
  • 12 Medjool dates, pitted
  • 2 T. cocoa powder, unsweetened
  • 2 T. coconut flour
  • 1 T. coconut oil, melted
  • 1½ T. pure maple syrup
  • 1 t. pure vanilla extract
  • ¼ t. coarse salt

Optional Coatings:

  • ¼ c. hazelnuts or almonds, ground
  • ¼ c. coconut flakes, finely shredded
  • 2 T unsweetened cocoa powder + ¼ t. each cayenne pepper and coarse salt

Place pitted dates in a small bowl filled with warm water. Set aside to soak for 10-15 minutes.

Line a rimmed baking sheet with wax paper and set aside. Pour each selected coating, if using, onto a separate shallow, rimmed plate and set aside.

Add hazelnuts to a food processor and process until finely ground.

Remove the softened dates from the bowl and drain off any excess water. Add dates and cocoa powder to a food processor and blend until smooth, approximately 3-4 minutes. Scrape the sides, as necessary, to ensure mixture is thoroughly combined.

  • Tip: Add a few drops of water at a time, if necessary, to achieve a smooth consistency, but don’t add too much.

Add coconut flour, coconut oil, maple syrup, vanilla extract, and salt to the mixture and process until combined.

Remove the dough from the food processor and divide into 15-18 equal-sized portions. Roll each section of dough into a ball before rolling in the selected coatings.

Once coated, place on prepared baking tray and place in the refrigerator to chill for several minutes before serving. Enjoy!


Best Valentine Recipes

This will be our third year at home celebrating Valentine's Day together. We used to go out every single year, fight the crowds, and have a very loud and busy Valentine's Dinner together.

Then, a few years ago, we decided to stay in one Valentine's because we were both too tired to go out. Do you know what we found out? We LOVED it so much.

We cooked together, ate dinner by candlelight at our table, and then snuggled on the couch with popcorn and a movie afterwards.

From that moment on, and every year after, we have chosen to stay at home and celebrate this special lover's holiday.
