    Preheat the oven to 350° F.

    Add the white rice to a 9x13 pan. Pour in the chicken stock and stir well to combine. Add the edamame and stir well. Place the chicken thighs on top and season generously with salt and pepper.

    Bake for 40-45 minutes, until the liquid has been absorbed into the rice.

    Drizzle with sesame ginger dressing before serving.

Ingredients for your shopping list:

  • 12 oz chicken breast, boneless, skinless, cut crosswise into 1/2-inch to 3/4-inch strips
  • 2 Tbsp cornstarch
  • 2 tsp canola oil, divided
  • 1 tsp dark sesame oil, divided
  • 1 small onion(s), cut into thin strips
  • 1 Tbsp ginger root, fresh, grated
  • 1 Tbsp minced garlic
  • 5 cup(s) bok choy, sliced crosswise 1/4-inch to 1/2-inch thick
  • 2 Tbsp water
  • 2 Tbsp low-sodium soy sauce

Summary: Lightly coat chicken with cornstarch in a medium bowl. Leave in bowl while you prepare skillet. Heat a large non-stick skillet over medium high heat (7 on a scale of 1-9) for 45 seconds. Add 1 teaspoon of the canola oil and stir-fry the chicken 4 minutes. Remove to a paper-towel lined plate. Heat remaining teaspoon of canola oil and stir fry onion 4 minutes. Add ginger and garlic and cook 20 seconds. Add bok choy and water, stir-fry over medium high heat 4 minutes. Return chicken to skillet, pour in soy sauce and cook 2 minutes. Sprinke with remaining 1/2 teaspoon sesame oil, then toss to coat and serve with cooked rice.

Given how ordering takeout tends to go, I&rsquove come up with a few different copycat versions of restaurant recipes to make at home.

If you like this Honey Soy Chicken and Rice, you might enjoy homemade broccoli beef, brown garlic stir-fry sauce, easy sesame chicken or teriyaki chicken and broccoli.

Of course, we don&rsquot just love making Asian takeout recipes at home. We also love making homemade Zuppa Toscana, Jo Jo potato wedges, and Chipotle barbacoa.

And don&rsquot forget dessert and drinks! We&rsquore a little bit obsessed with Stoli Doli (at least, the adults are!) and J. Alexander&rsquos carrot cake.

Because sometimes getting that all-in agreement on a carryout restaurant is harder than whipping up a quick meal at home.

soy sayce (or tamari, if gluten-free)

boneless, skinless chicken breasts (about 1 pound), cut into 1/2-inch cubes

scallions, roughly chopped, plus extra to serve

1-inch piece fresh ginger, roughly grated

smoked sausage, such as Chinese lapchang or good Italian salami, cut into 1/4-inch cubes

fresh shitake mushrooms, caps thinly sliced

long-grain rice, preferably Chinese


Heat the oven to 350°F. Whisk together the soy sauce, sugar, sesame oil, and cornstarch in a medium bowl. Stir in the chicken, scallions, garlic, and ginger, and toss so they are coated with the liquid. Place this mixture in the refrigerator and let it marinate for at least 15 minutes while you cook the mushrooms.

Place an oven-safe pan, like a 3-quart Dutch oven, over medium-high heat on the stove. When it is hot, add the sausage and turn the heat down to medium-low. Let the sausage slowly release its fat. When the bottom of the pot is slick with the sausage fat, add the mushrooms. Turn the heat back up to medium-high heat and let the mushrooms cook, without stirring them, for 5 minutes. Flip them over and cook for another 3 minutes.

Add 1 tablespoon oil to the pot, and sauté the rice briefly to develop some toasty flavor (you don’t want to brown the rice here, just sauté it for 1 minute or so), then add the salt and the chicken mixture from the fridge. Pour in the stock. Bring to a boil.

Turn off the heat, cover with a lid or with foil, and bake for 45 minutes. Make sure to taste the rice for doneness before taking it out of the oven. I like my rice a little chewy some might want it more cooked. Let stand 5 minutes, covered, before serving. Stir up the rice before serving, as the chicken and mushrooms will have risen to the top during baking. Stir thoroughly so they are incorporated throughout the rice.

Garnish with chopped scallions and serve with extra soy sauce and chili garlic sauce, if desired.


In a small skillet sprayed with nonstick cooking spray, over medium heat, combine 1/2 tsp oil with sesame seeds. Stir continually until sesame seeds are lightly browned and toasted. Remove from heat and set aside

In a small bowl, combine cornstarch, brown sugar, grated fresh ginger, soy sauce and vinegar. Mix and set aside

In a large skillet sprayed with cooking spray, add 1/2 tsp oil. When hot, add chicken strips and cook 3-4 minutes until done. Remove from skillet

Add snow peas, carrots, green onion, broccoli and red bell peppers. Stir fry vegetables 3-5 minutes until they are crisp-tender. Add chicken back to skillet and add soy sauce mixture, stirring constantly until thickened. Add sesame seeds and serve over rice.

  • 2 tablespoons sesame seeds
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 4 ounces fresh mushrooms, quartered
  • 1 green bell pepper, sliced
  • 4 green onions, sliced diagonally into 1/2 inch pieces

To Make Marinade: In a nonporous dish or bowl blend cornstarch with wine or sherry then stir in lemon juice, soy sauce, hot pepper sauce, ginger and garlic. Blend together and stir in chicken strips. Cover dish and refrigerate to marinate for 3 to 4 hours.

In a wok or large skillet, place sesame seeds and dry-fry over medium heat, shaking the wok, until the seeds are a golden brown color. Remove seeds and set aside.

To same wok or skillet add sesame oil and vegetable oil and heat slowly. Drain chicken, reserving marinade, and stir-fry in wok a few pieces at a time, until browned. Remove chicken with a slotted spoon and set aside.

Add mushrooms and green bell pepper to same wok or skillet and stir-fry for 2 to 3 minutes. Add the scallions and stir-fry 1 minute more. Return chicken to wok, together with reserved marinade, and stir over medium high heat for another 2 to 3 minutes, or until the ingredients are evenly coated with the glaze. Sprinkle toasted sesame seeds on top and serve immediately.

Why are most chicken and rice casserole recipes not gluten free?

It may seem like chicken rice sounds pretty innocent when it comes to gluten. I mean, rice is gluten free and chicken is gluten free, so what’s the big deal?

It’s the flavor additions and, most often, the condensed cream of chicken or mushroom or celery soup that contains gluten.

The gluten in condensed cream of (anything) soups is usually wheat flour. Plus these soups usually contain modified food starch, which could be made from wheat.

My mom’s original chicken and rice casserole uses a packet of Lipton Onion Soup Mix and that product also contains gluten.

Garlic Ginger Chicken

Garlic Ginger Chicken – Flavor packed Chinese takeout style chicken recipe made with fresh ginger and garlic in a soy sesame caramelized sauce. We served our chicken over steamed rice with fresh chopped green onions and a sprinkle of sesame seeds.

This chicken recipe has become one of mine and my husbands favorite dinner recipes to make in our house. We have been making it once a week! Which is why I am excited to share this recipe with you! You guys are going to love it.

Using fresh ginger and garlic is a must! The fresh flavors really give this chicken an amazing flavor that ground dry ginger and garlic just can’t really replicate. So make sure to use fresh in this recipe.

It was really yummy, but you can definitely serve it however you’d like. I will share some delicious side dish ideas for you below. One of my favorite things about this recipe is how easy it is to make for such a delicious end result.

This recipe makes about 2-3 servings. You can double this recipe if needed.

Ingredients you need for this recipe:

  • Chicken Thighs (boneless, skinless) – cut into small chunks. You can also use boneless, skinless chicken breasts.
  • Fresh Ginger – peeled and very finely chopped
  • Fresh Garlic – about 2 cloves, peeled and very finely chopped
  • Soy Sauce – I almost always use low sodium but you can use whatever soy sauce you have on hand.
  • Brown Sugar – I used light brown in this recipe, but you can also use dark.
  • Water
  • Cornstarch – to coat the chicken.
  • Egg – lightly whisked to coat the chicken.
  • White Wine Vinegar – You can also use Rice Vinegar if you do not have white wine vinegar on hand.
  • Yellow/White Onion – very finely chopped
  • Sesame Oil – I used Imperial Dragon sesame oil, but you can use any good quality sesame oil.
  • Canola Oil – for frying
  • Green Onions & Sesame Seeds – optional topping

How to make Garlic Ginger Chicken:

In a small bowl, mix wine vinegar, sesame oil, ginger, garlic, onion, brown sugar, soy sauce, and water.

Heat your skillet to medium heat and pour in the sauce. Bring sauce to a light simmer and let simmer for about 10 minutes until sauce darkens. Then, carefully pour sauce back into the bowl and set aside for later.

In a large mixing bowl, add chicken and cornstarch and toss until chicken is fully coated. You may need to add an additional tablespoon or two of cornstarch.

In a small bowl, whisk egg. Pour egg over the chicken and gently mix chicken to coat.

In the same skillet you cooked the sauce in, add oil and heat to medium-high heat. Once hot, carefully add chicken to the skillet. Gently spread chicken out into an even layer and let cook until bottom is golden. Don’t panic, the chicken will look weird at this point but it will all come together.

Once the bottom of the chicken is golden, flip chicken over, gently breaking pieces apart. Cook for another 5-7 minutes on the other side until golden. Then, turn heat to low and let cook for another 10 minutes, stirring occasionally.

Drain excess oil from pan (if any) and turn heat up to high. Pour sauce over the chicken and begin stirring frequently for a few minutes.

Serve with a sprinkle with fresh chopped green onions and sesame seeds (optional). Enjoy!
