This recipe for tomato sauce it's my favorite. It's just good for anything. That's exactly what it should be called, tomato sauce good at all. You can put it in any preparation. From pizza, pasta, lasagna, tomato soup, chicken with parmesan or fish in the oven. This is my favorite tomato sauce recipe, fast, delicious and extremely flavorful. In summer, I really want to take advantage of good and ripe Romanian tomatoes, especially since I love tomatoes and especially because my father constantly brings me tomatoes from his garden, organic, sweet and juicy.

These tomatoes remind me of my childhood with my grandparents. Not infrequently my grandmother found me among the stalks, eating tomatoes with both hands, without even washing them. And now I'm doing the same. I love to break a ripe tomato, wipe it with my hand and eat it with gusto. Unfortunately, this summer I was not able to reach my grandmother, but fortunately the tomatoes came from my father who made his retirement home very close to my grandmother.

In addition to my father's tomatoes, my grandmother insists on sending me fresh eggs from her chickens, onions, garlic, parsley. I'm really very lucky to have them there. Returning to the tomato sauce recipe, choose well-ripened, sweet and juicy tomatoes. Even if you buy them from the market, choose the smallest and completely red ones, with a thin skin. And beware of those that all look the same, as if they were made on a computer, as my father says. I chose to make a simple recipe, without onions, and without other vegetables, in order to enjoy the taste of tomatoes as much as possible.

So I put garlic, herbs, fresh basil and green thyme. I cut the tomatoes into cubes because I wanted to keep some of their texture, but you can also chop them with a food processor or a vertical blender. The result is a delicious tomato sauce, flavorful and so good that it can be eaten on bread. You can use it in any recipe you want, or you can put it hot in sterilized jars and you can use it in winter.


Step 1

Pizza Margherita

Pizza Margherita is a classic pizza, easy to prepare and the ideal base for any pizza you want to prepare: start with Margherita and add your favorite toppings!

For the top, mix warm water, sugar and yeast, let the mixture rest for 10 minutes. Meanwhile, put in the blender flour, salt, olive oil. Stir for a few seconds. Add the yeast mixture and continue to mix until we have a homogeneous, elastic dough, which comes off the walls of the bowl.

Form a ball of dough and move it into a large bowl, greased with a little olive oil. Cover the bowl with a clean towel and leave it to rise for 1 hour and a half or until it doubles in volume. The dough leavens best in a warm and dry place. I recommend you put the pot in the oven off, where we turn on only the oven bulb.

When the dough doubles in volume, we spread it in the tray, by hand. For a thin and crispy dough, spread the dough in the large tray of the stove. Or you can bake 2 pizzas in a special tray 25 cm in diameter. In order for the pizza not to stick, grease the tray a little with oil and sprinkle the corn flour.

When the top is spread in the tray, grease it with a thin layer of tomatoes mixed with crushed garlic. Add salt, basil pepper. Above are the slices of mozzarella.

Bake the pizza for 10-12 minutes in a very hot oven, at maximum temperature (min 220 & deg-250 & degC) or until the top is crispy and the mozzarella is nicely browned. Good appetite!

Legend has it that Pizza Margherita, originally from Naples, was created by Raffaele Esposito, in honor of Queen Margherita de Savoy, on the occasion of the unification of Italy in 1889. How do you prepare wood sauce?

Step 1:
For starters, we need to prepare the brown sauce. The bones are seasoned and put in the oven to brown. Leave for about 3 hours. Heat the oil in a pan. Over it add flour and vegetables (onion, carrot, celery, garlic). Everything is left to harden. The broth is mixed with 100 ml of water. With this you will extinguish the hardened vegetables. Now you will add the browned bones and you will put 2 l of water. Leave everything to boil until it drops well. At the end, the bones are removed and the sauce is strained.

Step 2:
The essence of the bones is easy to prepare, but you have to start in time because its preparation takes about a day. The bones are browned in the oven. Leave it for about 3 hours, then put it in a pot with salt, pepper and 3 l of water. Leave it to boil until there is about 200 ml of soup left.

Step 3:

The brown sauce is mixed with the essence of the bones and the red wine. Season to taste and cook for about 5 minutes. Then add the butter and brandy and mix well until the sauce is smooth. Let it simmer for another 5 minutes and the sauce is ready.

  • 3 golden sea bream of 300 gr. each (or other fish, for example trout) fresh, well cleaned

  • 3 fresh bay leaves

Choose a small bowl to work in. Put the finely chopped mint leaves in the bowl, add the coriander, garlic, sugar and pepper. Sprinkle with a pinch of salt and then mix the ingredients. Vinegar should be boiled separately and added over hot ingredients. Then set the bowl aside until the vinegar cools, then mix all the ingredients again. The more you mix them, the more mint sauce it will be more pasty. If it is easier for you, you can use a blender, although my advice is to mix all the ingredients yourself using a wooden spoon. Mix flour and dry yeast. Make a hole in the middle of the flour and add warm water with 1 teaspoon of sugar. Knead the dough well, and when it becomes consistent, add a tablespoon of warm water in which you dissolved the salt.
