How to make cinnamon cookies

In a bowl, mix the flour with brown sugar, granulated sugar, cocoa, cinnamon, grated orange peel and baking powder.

Make a hole in the center and add the egg and softened butter

Work the mixture until you get a homogeneous dough that you will put to harden in the fridge for 30 minutes

Take the dough and roll it out on a floured surface with a thickness of 3 mm
With a star-shaped pastry cutter, make lots of cookies that you will place on a baking sheet lined with parchment paper.

Very easy to prepare and even more to eat, I love to nibble them alone or soaked in hot milk, in a cup of flavored tea or as an accompaniment to a nice hot chocolate

It may be because of the cinnamon, but I find that these Thermomix cinnamon cookies are particularly suitable for the Christmas period. However, I love to prepare them all year round, because they are fast and fragrant!

But you can also use the classic cookie cutters. Or, if you prefer, you can cut round biscuits with the edge of the glass - as they used to do in grandma's kitchen - and then decorate with ice!

A tip for the rolling pin: when you pass it, flour the pastry well first, so it doesn't stick, and press it well. You will see that you can bake exceptional cookies!

Cinnamon biscuit cake

1) Prepare the base. Cut 9 sheets of baking paper about 20 cm long and draw on one of them a circle with a diameter of 18 cm. Overlap them, leaving the one with the drawing at the top, and following it as a trace, cut them all out with scissors. Heat the oven to 190 ° C.

2) Make cookies. 3) Bake the cookies. Align the paper discs on the moistened plate and, with the help of a spatula, spread about 4 tablespoons of compound for cinnamon biscuits forming a layer
subtle. Bake the discs in the oven for 10 minutes, until the edges are golden. Continue like this until all the Biscuits, then let them cool.

4) Stuff the millefeuille. Whisk 4.5 dl of fresh cream of great quality. Fix 1 biscuit disc without the paper on a serving plate, cover it with the whipped Cream, place another disc of biscuit on top and continue the layers ending with the cream.

5) Decorate and serve on the table. Sprinkle with the unsweetened cocoa powder and, with the back of a knife, divide the cream in wedges. Put the cake in the refrigerator to harden for at least 4 hours: i Cinnamon cookies they will soften making it easier to cut the cake.
