Lightly coat a large skillet with cooking spray. Place over medium-high heat. Sprinkle the trout with the salt, and season with pepper gently place 2 fillets in skillet, skin sides up. Reduce heat to medium, and cook until undersides are golden brown, 4 to 5 minutes. Carefully flip fish, using two spatulas if necessary. Cook until fish is slightly flaky in center when poked with a fork, about 2 minutes more. Transfer fish to a platter keep warm. Wipe out skillet, and repeat with remaining 2 fillets.

Wipe out skillet add oil and almonds. Cook over medium heat, stirring, until almonds start to turn golden, about 1 minute. Remove from heat, and immediately add parsley and lemon zest stir to combine. Stir in lemon juice as soon as it starts to bubble, pour sauce over fish. Serve immediately.

Step 1

First toast the chopped almonds in a wok until lightly golden and fragrant. Set aside and give the wok a wipe with a dry towel as you'll be using it to fry later.

In a small saucepan bring the 1 1/2 cups of water for the sauce to the boil. Add the frozen chicken strips and lightly boil with the lid on for 3 minutes.

Remove the chicken with a slotted spoon or a couple of forks and drain on a clean kitchen towel. Do not dump the water! Add the vegan butter and soy sauce to the chicken stock and heat until the butter melts then turn off the heat. In another saucepan mix the cornstarch with 3 tablespoons water until smooth then slowly add the chicken soy stock until all is added. Heat and stir until thick and glossy. Check seasoning, turn off heat and set aside.

In a small bowl add the cornflour, baking powder, xanthan gum and whisk. Add the water and vegetable oil and whisk really well until it is smooth and really thick.

Toss the drained chicken strips into some more cornflour, then coat them in the batter then into the breadcrumbs. It's easiest to have one hand for the batter and the other hand for the breadcrumbs here. Keep going until all the strips are coated and place them on a plate ready to fry.

Heat about an inch or two of vegetable oil in the wok you used to toast the almonds until it is very hot. Gently place the breaded chicken into the oil and fry until crisp and golden on both sides. Remove and drain on paper towels. Repeat until all the chicken is fried.

Reheat the gravy and give it a whisk- if it has thickened too much, you can also add a bit more water. Place some shredded lettuce on a plate, top with the fried chicken then spoon over the gravy generously. Sprinkle over the toasted almonds and serve immediately.

  • 1 cup slivered almonds
  • 2 pounds fresh green beans, trimmed and halved crosswise
  • 1/2 cup olive oil
  • 6 cloves garlic, chopped
  • 2 tablespoons ground coriander
  • 1 tablespoon freshly ground black pepper
  • Sea salt
  • Lemon wedges

Directions

Set a deep skillet over medium heat and fill halfway with vegetable oil. When it’s hot but not smoking, add the almonds and fry until just golden and fragrant, about 1 minute. Using a slotted spoon, remove them to a paper towel-lined plate.

Working in 2 or 3 batches, add the green beans to the oil and fry until tender and browned, 3 to 5 minutes. Remove the green beans with a slotted spoon, drain on a paper towel-lined plate, and then transfer to a serving plate.

Carefully drain the frying oil from the skillet and add the olive oil. Place the skillet over medium heat, add the garlic, and cook until golden brown, about 2 minutes. Add the coriander and black pepper, season with salt, and warm everything until you smell the coriander toasting, about 1 minute. Turn the heat off, add the reserved almonds, and stir to combine. Sprinkle the mixture over the green beans and serve with lemon wedges.

Roasting and Toasting Variation

If frying isn’t your thing, these beans can also be made in the oven. Toss the beans with 1/2 cup olive oil and roast them in a single layer on 1 or 2 baking sheets in a 500°F (260°C) oven, until tender and blistered, 15 to 20 minutes. The almonds can be toasted in a dry pan set over medium heat until golden and fragrant, about 5 minutes. Sauté the garlic, coriander, and pepper as described in the original recipe.

I chose the roasted and toasted option. Although I liked the flavor of the beans, I honestly feel like the fried version would be better for texture.

I used haricots verts. The garlic and spices on the beans are amazing, just be sure to watch the garlic as there’s nothing worse than bitter, burnt garlic in a dish (well, there are worse things, but. )

I was very impressed by this recipe for pan-fried green beans and almonds! I decided to do the oven-roasted version as I was getting ready to leave for a trip later that day. I added the garlic to the sheet pan with the green beans but with the high temp it may have been better to add it in afterwards as some got a bit too toasted. However, it was still absolutely delicious! I was very intrigued by the coriander flavor as I never would have thought to add that before. I can highly recommend this. The times were appropriate for doneness.

I have to admit that I really didn't think I would like these pan-fried green beans and almonds. I was a bit skeptical looking through the recipe as it seemed like quite a bit of coriander and black pepper. Everything works beautifully, though, and it is delicious!

I haven't tried it, but I think you could also blanch and then sauté the green beans and serve them that way if you didn't want to fry or roast them.

These pan-fried green beans and almonds are absolutely delicious! The flavors, textures, and presentation are marvelous. I cannot wait to make it again (and again). I chose to roast the beans in olive oil. Their texture was wonderful.

I've found that cooking for 8 minutes on 180C / 350F is perfect, however, all air fryers are different. Give your almonds a good shake after cooking for 5 minutes and assess. Then check in every minute after that. Almonds can go from almost done to burnt very quickly so it's best to keep a close eye on them.

Preheat the air fryer at 180C / 350F for 2 minutes.

Add the almonds into a single layer the basket and cook for 5 minutes. Give the basket a good shake and continue cooking, checking every minute, until they are done. I find 8 minutes is perfect in my air fryer but yours may need a little longer.

Move to a bowl to allow them to cool fully. Once cooled, store them in an airtight jar or container.

How To Blanch Green Beans

To start with, let’s talk about how to cook fresh green beans in general. There are a few ways to do it, but I’ll tell you about my favorite. Once you know that general process, you’ll see how easy it is to transform it into French pan fried green beans almondine with bacon.

The first step is to blanch the green beans. Blanching means cooking the green beans in boiling water for a very short time, just until they are crisp tender.

How do you blanch green beans? It’s super easy and takes just a few minutes.

Before you start, trim the ends of the green beans. I like to cut them in half, too, so that they are more bite-sized. That’s up to you. You can easily do it while you wait for the salt water to boil.

Once you have boiling water, add the green beans, and cook for just three or four minutes. Exactly how long to blanch green beans will vary a little bit, so just watch them for signs that they are done. The green beans are ready when they are bright green and crisp tender. Don’t overcook them!

Next, drain them and immediately plunge them into ice water. This prevents them from continuing to cook in residual heat.

If you don’t have ice, very cold water will work in a pinch, but the result will not be as good. You’ll end up with much better blanched green beans if you actually use ice water.

After the green beans are cooked, you can use them in all kinds of recipes, like gluten-free green bean casserole. You can also stir fry green beans, which is what we’ll be doing here. You know I love a good low carb stir fry!

Sauteing the green beans with bacon and garlic is probably my favorite way to eat fresh green beans. Because everything is better with bacon and garlic.

Except possibly this recipe for green beans almondine with bacon and garlic. That might be even better…
