To make this ganache which I use in many of my desserts, I buy a high-quality plain chocolate with at least 60% cacao.

- 250g dark chocolate - minimum 60% cacao, finely chopped
- 100ml whipping cream
- 75g caster sugar

- Heat a small saucepan over very low heat and melt the chocolate, stirring gently.
- Stir in the cream and caster sugar, and continue to stir until smooth. Use the ganache before it is completely cool, or it will solidify.
