Salad with rice, vegetables and tuna

Tuna salads are perhaps the most beloved fish salads precisely because canned tuna can be found everywhere at an affordable price. Of course, you can also try it with hake, mackerel or herring fillets, provided it is in its own juice, not in tomato sauce.

  • 100g of rice
  • 150g Mexican mixture
  • 1 canned small tuna pieces
  • 1 small red onion
  • a few olives
  • salt, pepper, olive oil, lemon juice

Boil the rice in water with a little salt, then strain it under a stream of cold water. We do the same with vegetables. Drain the tuna from the water (if you buy it in oil, leave it like this and don't add oil to the salad).
Finely chop the onion.
Mix the ingredients, season with salt and pepper and add a little more lemon juice.
Servim. If you have patience, let it rest for 10 minutes to penetrate the ingredients.

Between so much partying and so much celebration, it is worth changing our Christmas dishes and making a completely different dish like these. tuna rice noodles. In today's recipe I explain how to prepare these noodles at home in style Oriental.

I like to profit vegetables which I have in the fridge when I make this type of noodle, because it suits practically any vegetable. This time I used leeks, carrots, green peppers and red peppers, but other times I put zucchini, eggplant, onions or even broccoli and I assure you that they are also very tasty.

Observation: if you start from scratch the rice will have to be boiled for 18-22 minutes in salted water (3 cups of water to 1 cup of rice). At the end, rinse it with cold water and drain it in a strainer. Bake the peppers and peel and seed.

Mix well until smooth.

Preheat the oven to 180 degrees Celsius. Form the larger meatballs and pass them through the breadcrumbs and then place them in the tray on a baking paper. You can give them the shape of sticks if you want.

If you want to make a beautiful crust, grease them with a little olive oil.

Bake the meatballs for 20 minutes until nicely browned.
