- Place ingredients in the pan of the bread machine in the order recommended by the manufacturer.
- Select the sweet dough cycle. Five minutes into the cycle, check the consistency of the dough. Add additional rice flour or liquid if necessary.
- When bread is finished, let cool for 10 to 15 minutes before removing from pan.
Potato starch vs flour
Note that potato starch is not the same as potato flour, though sometimes potato starch is erroneously labelled as potato flour. Make sure what you buy is a refined, white powder, as true potato flour is made from the entire potato, including the skin, and is less refined.

I went for this recipe because people had rated it five stars, but I'm afraid it didn't work for me. I found it too heavy, too eggy, too sweet - too much of everything really, which meant it ended up tasting more like cake than bread.-15 Mar 2013

You can, of course, buy ready prepared gluten-free bread mixes, but there is something enormously satisfying about doing everything from scratch. Try experimenting with these bread recipes using your favourite add-on ingredients. Fruit, dried fruit, herbs and spices are all good options, as the up to date machines can do almost anything using separate containers for fruit, yeast, nuts, and more. When your gluten-free bread comes together it will taste delicious.

Gluten-Free Cinnamon Fruit and Raisin Bread
Few things make for a more mouth-watering breakfast than this combination of fruit and spice, and best of all: it’s actually healthy! Be bowled over by the amazing smell, and let the astonishing taste tempt you back for a second serving.
Serves: 1 Medium loaf
Preparation Time: 10 minutes
Cook Time: Follow breadmaker instructions
- 315ml water
- 3 large eggs
- 45ml vegetable oil, butter or melted margarine
- 180g mashed ripe bananas or apple sauce
- 1tsp salt
- 3tbsp brown sugar
- 2tbsp skimmed milk powder
- 450g rice flour
- 180g potato starch
- 80ml tapioca starch
- 1tsp xanthan gum
- 1tsp plain gelatine
- 1tbsp ground cinnamon
- 2tsp standard bread maker yeast
- 15g raisins or chopped nuts
- Apply your water, eggs, oil/butter/margarine and fruit of choice to the pan of your bread machine and give these ingredients a firm mix.
- Once you’ve done this you can introduce the remaining ingredients – adding them in the order listed. Set your bread maker to a standard cycle for a white loaf.
- Let your bread maker do its thing for five minutes, then lift the lid and ever-so-delicately insert a flat surface, such as a plastic spatula, down the sides to prevent sticking.
- Close the lid once more and let the machine finish its work.
- Once your loaf is baked, remove it from the breadmaker and leave it to cool, enjoying the mouth-watering aroma of cinnamon before tucking in!
PLEASE NOTE – if you use instant yeast, this recipe changes slightly. If this is case, also apply 1tsp of white or cider vinegar to the mix and bake using your bread maker’s express setting, not standard.

3 Variations of a Gluten Free Bread Recipe - Bread Machine
I have tried lots of variations of Gluten free bread but I wanted a recipe that I didn't have to search high and low for the different flours, this recipe has also cooked the best so far in my bread maker machine. Better yet I could get all the flours in one stop at the organic store. (Tip: Asian Markets have potato starch and tapioca and rice flour too) This recipe is Butter-Basted White Bread I got this from a book in the library, I cannot remember the title or author. I make this bread for my mother and friend who cannot have gluten in their diet. They rave that this is better than the small store loafs and love that it cuts without crumbling and ideal for sandwiches, toast etc, they both prefer the 1 white/1 brown rice flour mix with linseed and sunflower seeds for taste and texture. The minimum setting I have on my bread machine is 4 hours, the bread cooks fine on this for me. Produces a smaller loaf than wheat bread loafs but still a decent size.
If not using my gfJules Sandwich Bread Mix, whisk these dry ingredients together in a large bowl: GF flours, milk powder, baking soda, baking powder and salt.
In the large mixing bowl of a stand mixer, stir together the wet ingredients: honey, liquid of choice (club soda/gingerale/yogurt etc.), apple cider vinegar, oil and egg or flax seed and water mixture. Gradually add the dry ingredient mix in with the wet by pouring slowly into the wet bowl while mixing with the paddle attachment. Once incorporated, add the yeast granules and beat well for 1 - 2 more minutes.
If using yogurt, the dough will be very thick (much more like regular wheat flour bread dough than you may be used to with gluten free) however, if the dough seems too thick to spread into a loaf pan, gradually mix in milk, one tablespoon at a time, until the dough is still thick, but able to be smoothed with a spatula. If using another liquid, the dough will be more batter-like and easier to pour into the pan.
Scoop the dough into an oiled bread pan (use a dark metal pan if you like a darker crust on your bread lighter, shiny metal or glass if you like a light crust). The pan should be at least 8.5 x 4.5 inches 9 x 5 or Pullman pans work well.
Smooth the top, sprinkle with any toppings, then cover with a damp towel or a sheet of wax paper sprayed with cooking oil. Sit the covered dough for at least 30 minutes in a warm place like an oven warming drawer or an oven preheated to 200º F then turned off.
Remove the cover from the raised dough and transfer to a preheated convection oven set to 325º F or a preheated static oven set to 350º F. Cook for approximately 60 minutes, or until the crust is browning nicely and a cake tester or skewer inserted into the center of the loaf comes out clean (internal temperature should reach 205-210º F). Remove to a cooling rack. When cooled for 15 minutes, gently remove from the loaf pan to finish cooling before slicing
Gluten Free Dinner Roll Directions:
Prepare muffin tins or popover trays by oiling. Scoop equal amounts into each tray and smooth the tops. Sprinkle desired toppings. Cover and rise as directed above.
Bake at 350º F convection or 375º F static for 15 minutes, or until the crust is browning nicely and a toothpick inserted into the center of the rolls comes out clean (internal temperature should reach 205-210º F). Depending on how big the rolls are (muffin tin versus popover size), they may take a bit longer to cook, but test often to be sure they don't over-cook. Remove to a cooling rack.
Gluten Free Bread Machine Directions:
Baking bread in a breadmaker is simple. There are 3 steps: liquids first then dry ingredients then yeast. Read more tips on breadmakers and gluten free breads in my article on using breadmachines.
Bring all liquids to room temperature before adding to the machine, if possible. Whisk together the yolks and whites before adding to the bread machine with the other liquids alternatively, allow the flax seed meal to steep in water for 10 minutes before adding. Whisk together dry ingredients and add on top of liquids in the pan. Make a small well with your finger in the center of the dry ingredients and pour in the yeast.
Select either the gluten-free bread setting on your machine, or the setting with only one rise cycle and no punch-down (2 lb loaf setting). Close the lid to the breadmaker and let it do the rest!
You may want to check on the dough during the mix cycle to make sure the flour around the edges is incorporated. If not, use a rubber spatula to help the edges and corners of the pan mix more thoroughly.
When the machine is done mixing, smooth the top with a rubber spatula and sprinkle any desired toppings on top of the loaf. Close lid again to bake.
Once the bake cycle is complete, test the temperature of the interior of the loaf before removing from the pan with a bread baking thermometer &ndash it should have reached approximately 205-210º F. If it hasn&rsquot yet reached that temperature, either add time to your bread machine as another bake cycle of 5-10 minutes, or simply put the pan into a regular oven at 350º F (static), testing the temperature again at five minute intervals.
The World's Best Tasting Gluten-Free Bread Recipe
This recipe uses buckwheat - an herb - as its base, which gives the bread a slightly sweet, nutty taste. Some tapioca flour gives the bread the texture of many gluten-based breads, while the coconut milk adds a rich, dense flavor.
- Makes one medium sized loaf
- Prep time: Five minutes
- Bake time: "Dark" or "Whole Grain" setting on a bread maker - about 1-1/2 hours start to finish
- 1-1/3 cup buckwheat flour
- 1/2 cup brown rice flour
- 3/4 cups tapioca flour
- 2-1/4 teaspoons xanthan gum
- 1-1/4 teaspoon salt
- 1 packet gluten-free yeast
- 1 cup coconut milk
- 1/2 cup water
- 2 tablespoons honey
- 1 large egg
- 4 tablespoons olive oil
- 1/2 teaspoon cider vinegar
- Pour the liquid ingredients into the bread maker in the order listed.
- Carefully pour the dry ingredients into the bread maker onto the wet ingredients. Try to cover the surface of the wet ingredients completely, adding the yeast last.
- Set the machine to "dark" or "whole grain" setting. Do not be alarmed if the dough does not seem to be rising some buckwheat flours do not rise without significant heat. Your bread will rise as it bakes if it does not do so during the traditional "rise" times. These times are still necessary, however, to let the dough "rest" between kneading do not skip ahead to baking if your dough does not appear to rise.
- After the final "rise," wet down your hand and pull the dough hook from the bottom of the machine. Smooth down the top of the dough.
- Bake until golden brown and allow to cool before removing from the machine.
This bread works beautifully for sandwiches, toast or eating still warm and spread with butter and jam. It can also be modified for a number of other uses.
- Rolls: Set the machine to manual and pull out the dough after the last rise. Drop it by the tablespoon onto a greased cookie sheet and bake at 375 degrees for 30 minutes to get buckwheat rolls.
- Buckwheat Walnut bread and rolls: Set the machine to manual and pull the dough out after the last rise. Add 1/2 cup of walnuts and an extra tablespoon of honey to the dough. Mix well and pour into a bread pan. Allow to "rise" one last time then bake at 375 degrees for 30 to 35 minutes or until golden brown.
- Light bread: Substitute the coconut milk for skim or two percent dairy milk for a lighter version of this bread

This gluten-free bread is also dairy-free. I've tested it with dairy (milk for activating the yeast and butter instead of oil) and I found it to add to the quick bread texture.
If you want this gluten-free bread to have the same texture as deli style sandwich bread then you need to use water when activating the yeast and oil instead of butter.
Trust me. Plus, it's less expensive to use water and oil in gluten-free bread recipes than it is to use milk and butter.
